The Corporate Chef position at GBC Food Services is a pivotal leadership role responsible for shaping the company's culinary strategy and product innovation for fresh-food programs, with a particular emphasis on sushi and Asian-inspired menus. This role acts as the primary architect of the culinary lifecycle, spanning from creative ideation and recipe development to production standards, costing, validation, and post-launch improvements. The Corporate Chef collaborates closely with cross-functional teams and external partners to ensure all culinary initiatives meet the highest standards for consistency, food safety, and commercial viability. Supervisory responsibilities include managing culinary specialists, trainers, and test-kitchen team members, setting performance expectations, and nurturing professional development within the team. This role demands strong leadership skills, culinary and technical expertise, and the ability to manage complex projects involving franchise partners, vendors, and multiple internal departments. The Corporate Chef also plays a critical role in hands-on training, quality audits, launch readiness, and ongoing product evaluation to maintain GBC's leadership position in the fresh-food market. Flexibility with travel and work schedule supports the diverse demands of this dynamic role, requiring up to 40-50 percent travel and availability beyond regular business hours for key projects and launches.

Job Requirements
- Degree or diploma in culinary arts, food science, hospitality management, or related discipline preferred
- equivalent progressive culinary experience considered
- eight to ten years of progressive culinary experience including product development and multi-unit foodservice
- at least three years of culinary leadership experience in sushi or Asian-inspired fresh-food products
- current ServSafe Manager Certification or ability to obtain and maintain it
- ability to stand and walk for extended periods and perform repetitive hand work and precise food-preparation tasks
- ability to lift and carry up to 50 pounds and work safely around sharp tools and hot surfaces
- ability to travel by air and ground and work in varied food-preparation environments

- Advanced knowledge of sushi and Asian cuisine, fresh-food production, and recipe scaling
- demonstrated ability in product development and commercialization
- strong command of food safety, allergen management, and regulatory compliance
- proficiency in recipe costing, yields, margins, and performance analysis

Job Duties
- Develop and maintain the culinary vision and menu architecture for sushi and Asian-inspired fresh-food programs
- lead ideation, recipe development, bench testing, and commercialization for new products
- create standardized recipes, ingredient specifications, and preparation methods
- build accurate recipe and menu costs and evaluate margin, labor, and waste
- partner with Supply Chain and suppliers to qualify ingredients and protect quality
- collaborate with Food Safety and Quality Assurance on standards and regulatory compliance
- design and deliver training and production tools for consistent execution
- conduct store and vendor visits to audit culinary standards and coach teams
- provide culinary leadership for new store openings and market launches
- diagnose product and execution issues and define corrective actions
- partner with Merchandising, Sales, and Marketing on presentation and sales-support materials
- maintain controlled culinary documentation and change-management processes
- establish and report KPIs for launch readiness, recipe compliance, and food cost
