Job Description

This role reports directly to the Chef on duty and plays a critical part in the culinary operations by preparing, seasoning, and cooking a variety of dishes including soups, meats, vegetables, desserts, sauces, stews, casseroles, and other food items. The position is designed for a dedicated cook capable of following recipes meticulously, managing cooking equipment temperatures, and ensuring dishes meet quality and taste standards. The employee will also prepare meals for residents requiring special diets, following strict food code worksheets to meet healthcare requirements.
In addition to food preparation, this role includes responsibilities such as reading menus to estimate food requirements, procuring ingredients from storage, adjusting cooking equipment, and plating meals with garnishes and gravies. The cook must also maintain a clean and orderly work area and assist with marginal duties such as washing, peeling, cutting vegetables and fruits, trimming meat, baking bread and pastries, and supporting the food service line when needed. There is also an expectation of flexibility, as the cook may be asked to perform additional duties or take on chef responsibilities during staff shortages.
The position requires someone who is reliable, detail-oriented, and capable of adhering to health and safety regulations. The successful candidate must pass pre-employment requirements including criminal background checks and drug screening, aligning with regulatory and accrediting agency standards. This civilian position does not require any military service, commission, or enlistment.

Job Qualifications

Job Duties
- Prepares, seasons and cooks soups, meats, vegetables, desserts, sauces, stews, casseroles and other food stuffs
- Reads menu to estimate food requirements and procures it from storage, freezer, or refrigerator
- Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters and steam kettles
- Measures and mixes ingredients according to recipe
- Bakes, roasts, broils and steams meats, fish, vegetables and other foods
- Observes and tests food being cooked by tasting, smelling and piercing with a fork to determine that it is cooked and properly seasoned
- Carves meat, portions food on serving plates, adds gravies, sauces and garnishes servings to fill orders
