Job Description

The Department of Adult and Juvenile Detention (DAJD) is a key agency serving King County, Washington, operating the largest county jail in the state. This recruitment is to fill a full-time Cook/Baker position within DAJD’s Food Services Section. The Cook/Baker is integral to the daily operation of the department’s culinary services, preparing three meals daily for approximately 1,400 jail residents and staff. This position operates within a 24/7 institutional corrections environment, demonstrating the unique challenges and responsibilities that come with working in a secure correctional facility such as the King County Correctional Facility in downtown Seattle or the Maleng Regional Justice Center in Kent, WA. The role requires the preparation, cooking, baking, and portioning of meals that meet strict nutritional standards and comply with health codes.

As a Cook/Baker, you will supervise and train jail resident workers, ensuring that all food service activities uphold health, safety, and security standards. You will be responsible for estimating meal orders, maintaining inventory, preparing special diets, and adhering to food service quality controls. The position demands physical stamina for prolonged standing and the ability to lift and move items up to 50 pounds. Additionally, you will perform operator-level maintenance on commercial kitchen equipment and ensure a clean, organized, and safe work environment. The work schedule consists of 40 hours per week, with potential for overtime, including shifts during evenings, weekends, and holidays.

Job Requirements

  • 21 years of age or older by closing date
  • High school diploma or GED
  • Food Handler’s Permit from Seattle-King County Health Department
  • Valid Washington State Driver’s License
  • Ability to lift, carry, and move supplies weighing up to 50 pounds
  • Physical ability to stand for prolonged periods
  • Willingness to work any shift including evenings, weekends, holidays, and overtime
  • Ability to pass thorough background investigation including fingerprinting and criminal background check
  • Ability to provide clear instructions and supervise jail residents
  • Ability to operate commercial kitchen equipment
  • Eligible to work in the United States

Job Qualifications

  • High school diploma or GED
  • Food Handler's Permit issued by Seattle-King County Health Department
  • Valid Washington State Driver's License
  • Knowledge of food service equipment use and maintenance
  • Understanding of Washington State health and fire codes
  • Knowledge of food service techniques including menu preparation, supply ordering, inventory, quality control, and preservation
  • Basic math and computer skills
  • Experience in large quantity food preparation in commercial, military, or institutional settings
  • Ability to communicate effectively in English
  • Physical ability to perform prolonged standing and lift up to 50 pounds
  • Knowledge of special dietary needs and experience cooking medical, special, and religious diets
  • Ability to maintain safety and security in a corrections environment

Job Duties

  • Estimate meal orders, plan meals, assemble ingredients and supplies, prep, cook, and bake items for meals
  • Supervise and train work crews or jail resident workers
  • Provide clear directions and training in a well-organized manner
  • Train and develop new hire cooks in all Cook/Baker I positions
  • Portion and serve food, supervise food serving activities
  • Prepare reports and monitor food usage and leftovers
  • Make timely decisions on substitute foods
  • Maintain inventory of food, supplies, and equipment
  • Ensure work site cleanliness and safety standards
  • Maintain health code standards and quality controls
  • Plan and prepare food for special diets, verify diet orders and locations
  • Address conflicts and maintain a secure environment
  • Perform operator-level maintenance of commercial kitchen equipment
  • Prepare incident reports as per department policy
  • Provide excellent customer service to staff and jail residents
  • Drive DAJD kitchen vehicles and handle loading and unloading trucks
  • Perform other duties supporting the Food Services Section as assigned
