The ideal candidate will be capable of preparing and cooking food according to prescribed recipes, managing production schedules efficiently, and maintaining accurate production records through a food production system that includes forecasting and post-production documentation. The Food Production Cook will be required to batch cook with an emphasis on minimizing waste while upholding food quality. They will also handle the preparation and presentation of meals, ensuring proper portion control and the attractive display of food items.
Maintaining a safe, sanitary work environment and compliance with food safety standards is paramount. Therefore, the role requires diligent sanitation of workspace and equipment, proper labeling, dating, and rotation of food stock using the FIFO method. They will also be responsible for monitoring food temperatures and spoilage to guarantee safety and quality standards are met. The position demands physical stamina and manual dexterity to perform tasks such as lifting, bending, stooping, and handling equipment, all under the constraints of a dynamic work environment. Compliance with departmental and hospital inservices, including mandatory continuing education and safety initiatives, is essential to promote patient and staff safety and enhance departmental effectiveness.

Job Requirements
- High school diploma
- Three to five years of hotel, restaurant, or hospital cooking experience
- Knowledge of food preparation and safety
- Sanitation certification obtained within 90 days of hire
- Ability to lift up to 35 pounds unassisted and up to 50 pounds with assistance
- Ability to perform physical tasks including pushing, pulling, bending, stooping, standing, walking, twisting, and climbing
- Ability to work under time constraints in a fast-paced environment
- Ability to communicate effectively
- Ability to follow safety and sanitation protocols
- Ability to attend mandatory training and inservices
Job Qualifications
- High school diploma
- Three to five years of hotel, restaurant, or hospital cooking experience
- Culinary arts degree desired
- Knowledge of all aspects of food preparation
- Familiarity with modified diet preparation
- Computer experience desired
- Ability to read, write, and speak English
- Sanitation certification by Chicago Department of Public Health and State of Illinois within 90 days of hire
- Good communication skills
- Ability to interpret and follow recipes
- Ability to work with minimal supervision
- Ability to use kitchen equipment safely
- Ability to weigh and measure food items accurately
- Mathematical skills to measure and adjust recipes
Job Duties
- Prepare and cook food following prescribed recipes and production schedules
- Ensure adherence to deadlines regarding food production for each area of service
- Utilize food production systems including forecasting, production records, and post-production data entry
- Place food into appropriate serving containers and deliver on time
- Observe and taste food to check flavor, texture, and temperature, making judgement calls if standards are not met
- Batch cook food to minimize waste and ensure quality
- Follow proper HACCP procedures and record food temperatures
- Maintain sanitation of work areas and equipment
- Label, date, rotate, and store food items appropriately
- Report equipment in need of repair
- Wear appropriate head covering and gloves when handling food
- Monitor food spoilage and dispose of items as necessary
- Perform all tasks using proper body mechanics
- Observe safety regulations regarding equipment operation
- Participate in safety initiatives and patient safety reporting
- Attend all required inservices and complete annual competency-based training
- Submit ideas for improvement to management and contribute to team efforts
- Ensure compliance with all regulatory agency standards
- Participate in monitoring and improving patient satisfaction through established metrics
