Job Requirements
- 7 plus years experience as pastry supervisor in high-volume upscale hotel or restaurant with banquet facilities
- Knowledge of food service sanitation standards
- Ability to lead and manage pastry production teams
- Physical ability to lift up to 50 lbs
- Ability to work flexible schedules including nights, weekends and holidays
- Strong communication skills in English
- Baking and Pastry or Culinary degree or equivalent formal training preferred
Job Qualifications
- 7 plus years as a working pastry supervisor in high-volume upscale hotel or freestanding restaurant with banquet facilities
- Thorough knowledge of Food Service Sanitation Standards
- Exceptional pastry and dessert preparation and presentation skills
- Experienced with kitchen equipment such as mixers, proofing cabinets, dough sheeters, convection ovens, and walk-in coolers
- Ability to create artistically and aesthetically appealing pastries and desserts
- Baking and Pastry or Culinary degree or equivalent formal training preferred
- Strong organizational skills
- Excellent guest service skills
- Effective verbal and written communication skills in English
Job Duties
- Coordinates and oversees activities of all food production employees in pastry preparation
- Ensures all pastry products meet highest quality and timely service standards
- Leads the pastry team in the absence of Pastry Chef and Sous Chef
- Prepares volume food items according to standardized recipes for consistency
- Reads and comprehends Banquet Event Orders for upcoming events
- Administers departmental guidelines, policies, and procedures
- Monitors proper storage, rotation, and portion control of pastry products
- Practices inventory control including preparation and pick up of items from storeroom
- Supervises cleaning and sanitation of kitchen equipment and work areas
- Manages opening and closing kitchen operations
- Organizes and assists food handlers to meet Loews standards
- Monitors food preparation, holding and storage for food service sanitation compliance
- Reports equipment maintenance needs promptly
- Maintains cleanliness and compliance with health regulations at all times
- Works varied schedules including nights, weekends, and holidays
- Attends training and hotel meetings
- Promotes teamwork and excellent guest service
- Executes emergency procedures as required
- Complies with hotel safety and dress standards
- Engages in recycling and sustainability efforts
- Keeps current with hotel policies and information
