The prep cook role based in Anchorage is a vital part of HAP's food and beverage operations. This position involves preparing food products locally to be served aboard luxurious rail journeys, where kitchen spaces are compact but equipped with commercial-grade equipment. The prep cook operates on a fixed schedule at the rail yard using advanced food preparation techniques to ensure meals meet strict quality and consistency standards. Responsibilities include preparing, cooking, and processing food according to recipes while adhering to portion control and minimizing waste. The role requires strict monitoring of food safety through time and temperature logging, along with inventory management and maintaining cleanliness and sanitation throughout the prep areas.

Working independently yet collaboratively within a team, the prep cook ensures all end-of-day procedures are completed accurately while assisting with receiving and storing products properly. This role demands stamina and physical capability to lift up to 50 pounds and stand for extended periods. It also requires the ability to prioritize tasks in a fast-paced environment under time constraints. Job Requirements

  • Must pass a pre-employment background check
  • Minimum age of 18 years is required to reside in company housing, where available
  • Must be eligible to work in the United States
  • Must have or be able to obtain an Alaska Food Handlers Card
  • Must be able to lift 50 lbs
  • Ability to organize and prioritize work
  • Ability to work in a fast-paced environment with multiple tasks
  • Ability to work independently
  • Ability to comply with company policies and health and safety standards
  • Ability to stand and work on feet for a minimum of 8 hours per day

Job Qualifications

Job Duties

  • Perform a variety of advanced food preparation tasks
  • Routinely prepare, cook and process food to be utilized on-board rail cars
  • Follow strict recipe guidelines for consistency, minimal waste, and portion control
  • Routinely fill out logs and forms for time and temperature checks of food items, coolers, freezers, and sanitation buckets
  • Monitor inventory, rotate supplies, and maintain required inventory levels
  • Follow all end-of-day procedures including cleaning checklists, proper storage of products, and checkouts with the supervisor
  • Wash dishes and clean the prep kitchen area
  • Assist with receiving products and proper storage procedures
