The Culinary Assistant supports the broader goals of the shelter by ensuring that daily meals are prepared according to established culinary standards and that all food handling complies with safety regulations such as ServSafe standards. The role includes responsibility for assisting with food procurement from vendors such as SYSCO, aiding with deep cleaning operations, and supporting the Chef and Sous Chef with various kitchen tasks. Additionally, the assistant helps manage stock levels to ensure the shelter’s food supplies align with anticipated needs, contributing to efficient operations.
Beyond daily food preparation, the Culinary Assistant also participates in catering services for external events and occasionally operates essential shelter vehicles, such as vans and canteens. The assistant must be ready to cover shifts for colleagues during absences and maintain consistent adherence to dress codes and safety policies.

Job Requirements
- must be 21 years or older
- must be able to successfully pass a criminal background check including DOJ Livescan Fingerprint check
- high school diploma or GED equivalent preferred
- CA Food Handler Certification Card required
- valid California Class C Driver License
- completion of The Salvation Army vehicle course training
- ability to work independently and cooperatively with others
- good English written and verbal communication skills
- ability to empathize and work with diverse populations

Job Duties
- maintain culinary standards taught in class while students work in kitchen, during scheduled work therapy duties and hours
- assist with SYSCO where shelter food is purchased
- assist with deep cleaning for staff/students and weekend help
- responsible for ServSafe rules in kitchen and with staff/students
- assist Chef (Sous Chef) in various kitchen duties as needed including food preparation and kitchen clean-up
- ensure stock for all kitchen needs, including foodstuffs and supplies, along with coordination of Corps food bank warehouse stock with shelter stock
- assist with catering duties and driving the van and canteen when necessary
- assist with storage and receipt of food goods received
- collect leftovers, cover, label, and properly store according to food handling standards
- maintain a clean kitchen at all times, clean and orderly Salvation Army food storage, prep and service areas
- maintain a safe and sanitary work environment that conforms to all standards and regulations
- adhere to safety policies and accident reporting procedures, report problems in writing to Culinary Program in a timely manner
- ensure meal set up and clean up including dishwashing, cleansing and sanitizing equipment and systematic cleaning of major appliances
- ensure that all kitchen tools, keys and equipment are returned to their designated secure area
- ensure storage areas are locked at all times
- ensure all keys are returned and secured
- complete all required training
- cover days off for the Chef and other cooks as well as any vacation or sick days off they may take
- must adhere to shelter kitchen daily dress code
- clean Chef coat, SA provided hat and closed toed shoes
- perform other duties as assigned by Culinary Arts Director and or Corps Officers or Corps Assistant Officer
