The food service department plays a critical role in maintaining the nutritional well-being of individuals in institutional settings by preparing, cooking, and baking food in large quantities following standardized recipes and safety protocols. We are currently seeking a dedicated Quantity Food Cook to join our Nutritional Services team. This role involves preparing, baking, and cooking food for patients, residents, and employees in an institutional setting, emphasizing high standards of food quality, safety, and portion control. The Quantity Food Cook will be responsible for handling large-scale food production, following standardized recipes closely to maintain consistency, and ensuring proper food handling techniques are used to comply with all hygiene and safety regulations. This position may also include instructing and observing other food service workers, supporting operational efficiency and compliance within the kitchen environment. The Quantity Food Cook must also interact with clients in a therapeutic manner when appropriate and assist with training new staff members. Additional responsibilities include maintaining cleanliness and safety standards within the kitchen, documenting food temperatures, and participating in staff meetings and training sessions to stay current with departmental policies and procedures. The ideal candidate will possess a high school diploma or equivalent, with at least six months of experience in quantity food cookery, and have knowledge of food production, baking, portion control, and standardized measurements. ServSafe certification is preferred but not mandatory. The position requires physical stamina to stand for extended periods and handle lifting and carrying of food items up to 75 pounds with assistance. Job Requirements

Job Duties
- Use proper food handling techniques to prepare, wash, trim, cook and season food items according to standardized recipes
- Prepare and bake rolls, pies, cookies, biscuits, desserts, and other dishes in large quantities
- Bake, roast, broil, and steam meat, fish, poultry and other foods
- Prepare entrees, vegetables and salads
- Review menus, production sheets, and recipes to determine type and quantity of foods to prepare
- Requisition and portion food from storage and plan schedules to ensure readiness for meal times
- Confer with Nutritional Services Manager regarding modified diet preparation
- Process coverage for absent employees
- Test food by appearance, taste, smell, and temperature to ensure completeness
- Portion food for individual servings and direct distribution to tray line and household serving
- Serve food according to menu and orders
- Monitor heat controls and timers on ovens, steamers, etc.
- Measure and mix ingredients according to recipes
- Maintain proper temperature and handling of hot and cold foods and document food temperatures
- Collect meal tickets and maintain documentation
- Maintain safety, cleanliness, care and order of work areas, dishes, and equipment
- Report repair and maintenance needs
- Comply with and monitor safety and quality assurance standards
- Maintain confidentiality of patient, resident, and business information
- Relate to patients and residents in a therapeutic manner
- Assist with training of new staff
- Attend staff meetings, in-service and training sessions, complete online training courses
- Complete and maintain necessary documentation according to policies
- Complete assigned cleaning duties efficiently
- Interact with team members respectfully
- Assist food service supervisor in ordering produce and dairy items
- Perform related functions as assigned
