The Rail Cook role within this extraordinary company offers a rare and exciting culinary career opportunity, crafting memorable dishes for guests while traveling through some of the most beautiful and remote wilderness areas of Alaska. This position involves preparing carefully crafted breakfast and lunch meals aboard their unique rail kitchens, where chefs work onboard moving train cars—a distinctly challenging and rewarding setting. Rail Cooks focus on using local ingredients whenever possible, elevating food quality and presentation to exceptional standards. The position demands performance and consistency under the fast-paced conditions of meal service while maintaining excellent teamwork and integrity. Duties include managing inventory, preparing employee meals with strict protocols, adhering to food safety and sanitation regulations, and completing daily logs for temperature checks and compliance. This role offers invaluable experience in a unique culinary environment that combines hospitality, travel, and nature.
The position is open to applicants aged 18 and older who meet employment eligibility criteria and pass a background check. Candidates must be physically capable of lifting up to 50 pounds, working safely in a hot kitchen environment, standing and walking for extended periods, and effectively prioritizing tasks in a team setting. Job Requirements
- Must pass a pre-employment background check
- Minimum age of 18 years is required to reside in company housing, where available
- Must be eligible to work in the United States
- Holland America-Princess is unable to sponsor or take over sponsorship of employment visas at this time
Job Qualifications
- Must have or be able to obtain an Alaska Food Handler Card
- Ability to lift 50 lbs
- Ability to work around hot kitchen equipment safely
- Ability to stand and walk for long periods
- Ability to organize and prioritize work
- Ability to maintain attention to time constraints
- Ability to work in a team or group environment
- Ability to work in a fast-paced environment with multiple tasks and external influences
- Ability to work independently with minimal supervision
- Ability to support and comply with company policies, procedures, and guidelines including health and safety standards
- Ability to stand, walk, and work on feet for a minimum of 8 hours per day
Job Duties
- Perform a variety of food preparation tasks for breakfast and lunch served on the train
- Responsible for accurate inventories of all products in the assigned kitchen
- Maintain ticket times during high volume, fast-paced meal service
- Prepare employee meals, following all employee meal protocols while maintaining minimal food waste and controlling portions
- Follow all end-of-day procedures including cleaning checklists, proper storage of products, and checkouts with the supervisor or management
- Routinely fill out logs and forms for time and temperature checks of food items, coolers, freezers, and sanitation buckets
