Job Duties

  • Lead and supervise a crew of cooks and shipkeepers
  • prepare and cook a variety of meals including meats, fish, poultry, soups, vegetables, fruits, salads, breads, cakes, and desserts
  • manage storage and preservation of galley commodities for 30 to 60 personnel
  • ensure cleanliness and sanitary conditions of the galley, messroom, and crew quarters
  • maintain proper food safety standards during preparation and cooking
  • oversee inventory control and supply management
  • provide training and guidance to subordinate staff
