The Cook III - Lead Line Cook position at Gravity Haus Big Sky is a crucial leadership role within the culinary team. This role demands an experienced culinary professional with expert-level skills and a strong passion for delivering high-quality cuisine made from the freshest premium ingredients. The Lead Line Cook will primarily oversee the hot line, including grill and sauté stations, demonstrating proficiency in butchering high-end cuts of steaks, meats, game, fish, and shellfish. They will manage protein inventory in close partnership with the Sous Chef and Executive Chef to ensure smooth kitchen operations and inventory accuracy.

Responsibilities include working across multiple kitchen stations with moderate supervision, assisting teammates with food preparation, ensuring cleanliness and organization of workstations and storage areas, and maintaining the highest sanitary and professional standards in all food production. The Lead Line Cook is also tasked with order coordination for service, managing inventory levels, communicating challenges to the on-duty Chef, and providing break coverage to teammates when necessary. In addition, this role involves display cooking, plating dishes, directly interacting with guests, and ensuring accommodations for special dietary needs.

Candidates for this role should be skilled in various cooking techniques such as slicing, carving, roasting, steaming, frying, marinating, grilling, sautéing, and braising. Job Requirements

  • Experience leading others or a strong desire to step into a leadership role
  • Skilled in butchering premium high-end cuts of steak, meat, game, fish, and shellfish
  • Strong organizational and active listening skills
  • Reliable and able to maintain a clean and organized work area
  • Ability to work on feet for extended periods and lift up to 30 lbs
  • Proficient knife skills
  • Passion for hospitality, teamwork, and creating positive guest experiences
  • Ability to operate and maintain kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
  • High school diploma, culinary school, or equivalent experience preferred

Job Duties

  • Lead the hot line including grill and sauté stations nightly using premium vegetables, fish, and meats
  • Butcher high-end steaks, meats, game, fish, and shellfish
  • Manage protein inventory in collaboration with the Sous Chef and Executive Chef
  • Work multiple kitchen stations with moderate supervision
  • Assist teammates with food preparation and coordinate orders for service
  • Prepare dishes to standard recipes in a timely, professional manner
  • Maintain cleanliness of workstations, kitchen areas, walk-in coolers, and freezers
  • Ensure production of the highest quality dishes in a sanitary and professional manner
  • Monitor and maintain workstation inventory levels
  • Order stock for upcoming shifts as required
  • Communicate issues and challenges to the Chef on duty
  • Provide break coverage for teammates as necessary
  • Work closely with Line Cooks, Prep Cooks, Kitchen Workers, and Servers to ensure smooth operations
  • Address guest and team member concerns as needed
  • Adjust kitchen operations based on performance and business needs
  • Prepare proteins and menu items using various techniques including slicing, carving, roasting, steaming, frying, marinating, grilling, sautéing, and braising
  • Perform display cooking, plating dishes, and interacting with guests regarding ingredients and recipes
  • Organize work to meet daily production goals and service needs
  • Guide and support the food service team
  • Prepare dishes for guests with food allergies or intolerances
  • Be an ambassador for Gravity Haus, sharing our mission and values with colleagues and guests
