The role of Kitchen Cook at HALL Park Hotel offers a dynamic and versatile culinary position within this elite hospitality environment. Responsible for preparing various foods across breakfast, lunch, and dinner services, the position requires working at assigned kitchen stations with duties including setup and breakdown that comply with the hotel's high standards for safety, sanitation, and quality. The ideal candidate will be involved in all aspects of food preparation, utilizing a broad range of cooking methods such as steaming, baking, boiling, frying, sous vide, broiling, and grilling. This role demands proficiency in ingredient preparation—chopping, portioning, mixing, and storage—and the ability to operate various kitchen appliances including ovens, grills, fryers, and mixers.

Beyond food preparation, the Kitchen Cook plays a pivotal role in maintaining the cleanliness and sanitation of the kitchen environment by washing and disinfecting kitchen tools and areas, ensuring proper food storage, and adhering to all food safety protocols including temperature controls and product rotation. Job Qualifications

  • High school diploma or equivalent preferred
  • Previous kitchen supervisory experience preferred
  • Ability to follow recipes and calculate amounts within recipes

Job Duties

  • Prepares a variety of foods with various cooking methods including steaming, baking, boiling, frying, sous vide, broiling, and grilling to meet production schedule
  • Pulls required items in sufficient quantities to prep according to menu forecasts
  • Prepares ingredients for cooking including portioning, chopping, and storing food
  • Wash and peel fresh fruits and vegetables
  • Operate ovens, stoves, grills, microwaves, and fryers
  • Sets up, clears and breaks down work station
  • Prepares selected food as directed according to company recipes, quality and presentation standards, and food preparation checklists
  • Test foods to ensure proper cooking
  • Monitor food quality during preparation
  • Wash and disinfect kitchen areas, tools, and equipment
  • Complete HCCAP logs daily for hot holding and coolers/freezers
  • Clean storage areas and maintain sanitation
  • Properly receive and store food deliveries
  • Report maintenance or problem areas to supervisor
  • Follow company safety and sanitation policies
  • Maintain food at proper temperatures and control waste
  • Train and re-train staff in food preparation, safety, and sanitation
  • Maintain teamwork and communication
  • Work efficiently with kitchen equipment
  • Respond professionally to questions and requests
  • Maintain punctuality and uniform standards
  • Perform other duties as assigned
