The role of Cook II - Floater is a vital position within Claremont McKenna College's Food Services, managed under Bon Appetit Management Company. This full-time, benefits-eligible position aligns with the 9-month academic calendar, requiring a flexible schedule including weekends, holidays, evenings, and overtime as necessary. The pay range for this position is approximately $23.00 to $26.00 per hour. Reporting to the General Manager of Bon Appetit, the Cook II - Floater is responsible for preparing fresh ingredients according to the Chef's directions, utilizing a variety of cooking techniques such as slicing, marinating, boning, and basic food preparation. Food safety, sanitation, and maintaining quality standards at all times are essential components of this job, where adherence to health codes and following from-scratch cooking principles are diligently maintained.

Flexibility is key in this role, as the Cook II - Floater works across various kitchen stations, such as both hot and cold food preparation areas, adapting to daily menu assignments, and supporting catering events when needed. This position requires the ability to batch cook in response to meal demand, ensure proper presentation and garnishing of food, and maintain ingredient storage protocols including labeling and temperature control. Cleanliness in the kitchen workspace, including weekly deep cleaning tasks of equipment like hoods, stoves, and ovens, is a mandatory part of the responsibilities.

The Cook II - Floater is expected to work cooperatively with team members, take direction effectively, display a positive attitude, and manage multiple priorities efficiently. Job Qualifications

  • High school diploma or GED or equivalent combination of education, training and/or experience
  • minimum of two years experience in high-volume line cooking or production cooking in a full-service dining or food service establishment with emphasis on specialty cuisine menu production preferred
  • possession of a California Food Handlers Card
  • knowledge of food sanitation policies and procedures
  • experience working in a fast paced commercial kitchen using commercial kitchen utility equipment
  • advanced knowledge of basic food products such as meat, poultry, fish, produce, and dry goods
  • working knowledge of specialty food equipment including woks, rotisseries, smokers, and teppanyaki grills
  • advanced knife skills and ability to perform basic cooking methods
  • ability to prepare food from scratch
  • ability to perform simple arithmetic functions related to food and beverage preparation
  • flexibility to work in different areas of the Dining Hall
  • initiative in performing work tasks and willingness to assist others

Job Duties

  • Review daily menu assignments with the Chef and prepare ingredients per direction
  • ensure preparation is completed and communicate with Chef on recipes and portions
  • batch cook during the course of the meal based upon demand
  • ensure food is presented and garnished appropriately
  • ensure ingredients are covered, labeled, and properly stored
  • assist with catering preparation as needed
  • cross train on cold and hot food stations
  • diligently maintain a clean and sanitary workspace during the course of the meal and while preparing food
  • sanitize workstation upon the conclusion of the shift
  • setup and maintain station during meal service
  • breakdown and clean station at conclusion of meal service
  • responsible for weekly deep cleaning of work stations, including hoods, stoves and ovens
  • follow proper food preparation and sanitation directives as established by Health Department
  • comply with internal policies and procedures as they apply to food, sanitation, and safety within the Dining Hall
  • take and follow directions
