This entry-level role focuses specifically on dietary and food services and carries responsibilities essential to the preparation and servicing of meals for staff, visitors, and patients across Tufts Medicine's hospital and retail food service locations. Under general supervision, employees in this position prepare and serve meals based on general and special diets, ensuring adherence to the hospital's rigorous standards for accuracy, quantity, appearance, and food safety. The role involves operating and maintaining kitchens, cafeterias, and food counters, managing food inventories, scheduling vendor deliveries, planning menus, and complying with all regulatory guidelines including HACCP and ServSafe practices. This position is critical in supporting the hospital's food production operations for multiple meal periods including breakfast, lunch, dinner, and special events.

Employees will engage in basic culinary tasks such as preparing a variety of hot and cold foods, portioning meals, seasoning and cooking recipes, operating kitchen equipment, and ensuring sanitary work conditions. Key responsibilities include preparing food according to established recipes, practicing strict food handling and infection control measures, monitoring food quality, maintaining proper storage and labeling of food items, and participating in kitchen cleaning and sanitation. The role also involves collaboration with peers and supervisors to maintain a smooth workflow, reporting issues such as spoiled food or unsafe conditions promptly, and occasionally assisting with routine manual duties like stocking and cleaning.

Job Requirements

  • One year of related experience in a food services environment or restaurant
  • High school diploma or equivalent
  • ServSafe certification preferred
  • Ability to stand and walk for 95 percent of the day
  • Ability to lift approximately 30 pounds and push loaded carts
  • Ability to handle money and use cash register
  • Willingness to adhere to infection control and sanitation guidelines
  • Ability to work under supervision and follow established procedures
  • Flexibility to work various shifts including special events

Job Qualifications

  • High school diploma or equivalent
  • One year of related experience in a food services environment or restaurant
  • Training in apprenticeship program, vocation, or cooking school preferred
  • ServSafe certification preferred
  • Familiarity with HACCP food safety standards
  • Ability to read, write, and adjust recipes
  • Interpersonal skills to interact with patients, care team, and employees
  • Ability to operate kitchen mechanical devices
  • Ability to use knives for food preparation

Job Duties

  • Follow menu prepares and cooks food for all regular and modified diet meals assuring quantity, quality and timeliness of meals according to designated recipes and daily production sheets
  • Practice accepted HACCP food production and food handling principles using appropriate infection control measures
  • Review menus and prepare food items in advance storing appropriately
  • Follow basic recipes and product directions for preparing, seasoning, cooking, tasting, carving and serving various food items
  • Operate kitchen equipment to measure and mix ingredients, wash, peel, cut and trim fruits, vegetables, meat, poultry or fish
  • Taste products, read menus, estimate food requirements, check production, and keep records to plan production and requisition supplies
  • Open and close kitchen ensuring uninterrupted food supply and prepare menu substitutions with leadership consultation
  • Monitor food quality and report substandard or spoiled food to manager
  • Ensure proper storage of frozen and refrigerated food including labeling and dating
  • Assure proper storage and consultation on leftovers and menu planning
  • Clean and oversee cleaning and sanitation of kitchen areas and food preparation equipment
  • Maintain positive team relationships and collaborate to achieve goals
  • Report problems related to food quality, supplies, and safety
  • Perform routine manual tasks such as loading, unloading, sweeping and cleaning
  • Produce food and serve customers at a la carte or operate grill station
