The Sycuan Band of the Kumeyaay Nation is a community with a rich heritage that dates back centuries. The role of Cook II at Sycuan is an exciting opportunity for individuals passionate about culinary arts and delivering exceptional food experiences. Reporting to the designated venue Sous Chef, this position focuses on preparing specialty cuisine and standard menu items strictly following approved recipes, cooking methods, and quality standards as set by the Food & Beverage Culinary Management. The Cook II is responsible for maintaining all food, equipment, and kitchen areas under strict adherence to health codes and casino operational standards. This role requires a team-oriented and guest-focused attitude, as well as the ability to work collaboratively with management and fellow team members. It is an hourly position that emphasizes the importance of culinary skills and operational efficiency in a dynamic hospitality environment.
This position offers those with experience in casual or fine dining cooking a platform to hone their craft and contribute to a high-volume, quality-driven kitchen. The Cook II will manage a designated workstation, ensuring flavor profiles, food presentation, and menu consistency meet Sycuan's elevated standards. Candidates possess proficient knowledge of basic food products, standard and specialty kitchen equipment, and demonstrate capabilities in fundamental cooking techniques. Essential skills like knife handling, food rotation methods including FIFO (First In, First Out), and the ability to read food order tickets are crucial to the success of the role.

Job Qualifications
- County of San Diego Food Handler Card
- 1 years casual and/or fine dining cooking experience
- High School Diploma or G.E.D.
- Culinary degree
- California Driver's License in good standing
- Casino experience
- Working knowledge of safe food handling practices
- Ability to work effectively with team members and guests
- Ability to communicate effectively in the English language
- Ability to follow recipes and read production sheets
- Ability to maintain professionalism and composure
- Ability to perform simple mathematical calculations
- Ability to understand verbal directives and written instructions
- Ability to routinely lift and carry 50 pounds
