The role of Cook II at Embassy Suites by Hilton Tampa Airport Westshore is a critical position within the hotel's culinary team, responsible for maintaining, setting up, and overseeing food production and quality control. This position specifically focuses on the preparation of meat, fish, fowl, and other related food items at the front-line station. Operated 24/7, the hotel requires flexibility with varying shift days, start times, and hours, in this case the Cook II is scheduled for the 3:00 PM to 11:00 PM shift.

As Cook II, you will be tasked with preparing daily production lists, following recipes accurately, and ensuring the high standard of food quality and presentation. This includes broiling and sautéing food items according to standardized recipes and specific guest requests to maintain product consistency. You will be expected to visually inspect and select only premium food items, control proper storage, and monitor portion sizes especially for meat cuts to ensure quality output. Maintaining cleanliness and operational condition of refrigeration, kitchen equipment, and workstations in compliance with health department regulations is also a key duty. Additionally, keeping logs on cooling, heating, and temperature standards ensures food safety and regulatory adherence.

Safety is paramount in this role, requiring adherence to all company policies, safety procedures, and emergency protocols. You will utilize protective equipment and report unsafe conditions or incidents to management, contributing to a safe workplace for all team members. Appearance and professionalism are also important, with all staff required to maintain a neat and well-groomed appearance according to established standards.

Ideal candidates will have at least three years of cooking experience, preferably with broiler cooking, and hold a current Food Handler Card. A good working knowledge of food preparation techniques, service standards, and kitchen sanitation is necessary. Competency in operating kitchen equipment such as stoves, ovens, broilers, slicers, and steamers, along with basic math skills to follow recipes precisely, is essential. The role also requires basic English communication skills to understand instructions and interact with team members effectively.

Physical demands include the ability to lift and move items up to 100 pounds, use various kitchen tools with manual dexterity, and work in environments with extreme temperatures and confined spaces. Frequent movement involving bending, twisting, and standing is expected.
