Job Description
The Fond du Lac Band of Lake Superior Chippewa, also known as Nagaajiwanaang (Where the water stops), is a sovereign Ojibwe nation and one of the six Bands of the Minnesota Chippewa Tribe. The role to be filled is that of a Cook II, an integral part of the culinary team responsible for food preparation and presentation that meet the resort's high standards. New hires undergo a probationary period, which lasts 90 days for full-time employees and 120 days for part-time employees.
Reporting directly to the Sous Chef or Cook III, the Cook II plays a hands-on role in preparing, seasoning, and cooking a broad variety of dishes for buffet and banquet services, including soups, meats, vegetables, and other food items. The role demands meticulous attention to hygiene and cleanliness, ensuring the buffet area is free of debris and that food temperatures are monitored consistently. The Cook II must demonstrate strong culinary skills such as measuring and mixing ingredients per recipes and adjusting cooking equipment thermostats to maintain optimal conditions. The position involves baking, roasting, broiling, steaming various foods, and garnishing dishes to casino culinary guidelines.
Candidates for this role must be capable of managing multiple tasks under pressure, including replenishing buffet food promptly and maintaining the organization of their work area. They should also possess excellent communication skills to respond to guest requests and work collaboratively within the kitchen team. The resort mandates that all employees wear the departmental uniform during shifts and actively participate in required departmental and regulatory training programs, including Title 31 and SARC certifications. Job Requirements
- High school diploma or equivalent
- two years of cooking experience or one year as Cook I at Black Bear Casino Resort
- food handler's certification or ability to obtain within 3 months
- knowledge of cleanliness and sanitation standards

Job Duties
- Prepares, seasons, and cooks soups, meats, vegetables, and other foodstuff for consumption in buffet and banquets
- keeps the buffet clean and free of food debris
- assists with replenishing the food on the buffet
- adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles
- measures and mixes ingredients according to recipes, using a variety of kitchen utensils and equipment, such as blenders, mixers, grinders, slicers, and tenderizers, to prepare soups, salads, gravies, desserts, sauces, casseroles, etc.
- bakes, roasts, broils, and steams meats, fish, vegetables, and other foods
- adds seasoning to foods during mixing or cooking, according to casino guidelines
- observes and tests foods being cooked by tasting, smelling, and piercing with fork to determine that it is cooked
- carves meats, portions food in hotel pans for service in the buffet
- washes, peels, cuts and shreds vegetables and fruits to prepare them prior to cooking
- observes guests and responds to any additional requests
- monitors hot and cold food temperatures through the shift
- carries out tasks assigned by the Sous chefs in a timely manner
- helps keep the working station and the kitchen clean
- wears department uniform during scheduled work hours unless prior arrangements have been made
- attends all mandatory department trainings
- attends all required Title 31 and/or SARC trainings
- ensures confidentiality of financial, employee, band member, and client records
- displays a responsive and professional manner in responding to requests, complaints, and problems
- demonstrates courtesy, respect, and sensitivity as a representative of the Fond du Lac Band
