The role available is for a Line Cook II, an essential position within Sonesta's culinary team that plays a critical role in maintaining the high standards the company is known for. This position requires a professional who is committed to preparing all food items with attention to cleanliness, sanitation, taste, quality, timeliness, and cost-effectiveness. The Line Cook II is entrusted with not only preparing food but also supervising junior kitchen staff, exemplifying leadership qualities that support teamwork and operational efficiency. Working primarily in the broiler, sauté, and grill stations, the Line Cook II ensures all dishes are prepared to standard recipes or as directed by guest orders, guaranteeing consistency in presentation and flavor.

This evening shift position runs from 1:30 pm to 10 pm, four days a week (Wednesday through Saturday), providing a structured working schedule that balances efficiency and work-life harmony. The Line Cook II will be responsible for tasks that include setting up and maintaining food production stations, monitoring food quality control, and complying with health department regulations to ensure workplace cleanliness and safety. Furthermore, the position demands a strong proficiency in reading and applying recipes, handling inventory according to use records, and employing necessary math skills to accurately prepare ingredients. Physical stamina and strength are essential given the demands of standing for extended periods and moving or lifting culinary products.

In addition to technical skills, Sonesta emphasizes delivering passionate and engaging service to guests. The Line Cook II is expected to embrace the company’s GUEST model, which focuses on greeting guests warmly, using eye and ear contact or guest names, anticipating guest needs, and solving or owning all requests and complaints with professionalism and care. Job Requirements

  • Previous experience as a line cook or similar culinary role
  • Ability to stand for extended periods and lift heavy products

Job Duties

  • Maintain, set up, and control food production and quality of meat, fish, fowl, sauces, stocks, seasonings, and other food items at broiler, sauté, grill, and other stations
  • Prepare all hot food items according to standard recipes or guest orders ensuring consistency
  • Visually inspect, select, and use ideal food items for sautéing in menu preparation
  • Ensure daily production chart is properly completed to standards
  • Keep refrigeration, storage, and work areas clean and compliant with health regulations
  • Ability to read and perform use record specifications
  • Ensure all equipment is clean and functional
  • Perform and assist in other operational duties as assigned
  • Deliver passionate and engaging service using the GUEST model to exceed guest expectations
  • Build solid relationships with colleagues treating them with respect and dignity
