The Cook II position at Paradies Lagardère is a non-exempt role within the Dining Division, reporting directly to the Kitchen Manager and General Manager. This role is designed for skilled culinary professionals, particularly those with experience in pizza making and scratch kitchen environments. The Cook II, often known as a pizza cook, is responsible for preparing menu items entirely from scratch, including dough handling, sauce preparation, toppings, proteins, and specialty ingredients. The role demands an expert understanding of live ovens, especially high-heat and wood-fired ovens, to ensure pizzas and other dishes are cooked to perfection with consistent quality, proper bake times, and presentation.
This position requires versatility, with the ability to operate multiple cooking stations such as sauté, pizza build, prep, and oven areas. Attention to detail is critical to maintain 100 percent accuracy with recipes, portioning standards, and presentation guidelines. The Cook II ensures that all food preparation and service meet the high standards of the company while adhering strictly to food safety, sanitation, labeling, and storage protocols. Furthermore, this role requires maintaining kitchen cleanliness, organizing station restocks, and food rotation following FIFO guidelines to ensure freshness and reduce waste.
The position demands the ability to work efficiently in a busy, fast-paced kitchen environment with visible guest interaction, emphasizing teamwork, communication, and professionalism. Supporting training for new kitchen staff and reporting any maintenance needs for kitchen equipment are additional key responsibilities. Job Requirements
- Ability to stand for long periods in a high-heat kitchen environment
- Ability to lift up to 50 pounds and perform physical kitchen tasks including bending reaching and carrying
- Comfortable working in environments with high heat open flames steam and continuous service flow
- Strong attention to detail speed and consistency under pressure
- Ability to follow direction and work collaboratively in a team-oriented kitchen
- Professional attitude strong work ethic and commitment to quality and consistency
Job Qualifications
- Minimum 1-2 years of cooking experience in a high-volume restaurant environment required
- Experience in pizza making dough handling or scratch kitchen environments strongly preferred
- Experience working with wood-fired gas or specialty pizza ovens preferred
- Strong understanding of cooking techniques ingredients and kitchen operations
- ServSafe Certification or equivalent preferred
- Culinary school training preferred but not required
- Ability to read write and communicate effectively in English
- Ability to work a flexible schedule including nights weekends and holidays in a 7-day operation
Job Duties
- Prepare all menu items from scratch including dough handling sauces toppings proteins and specialty ingredients
- Execute pizza production using live ovens and high-heat cooking equipment ensuring proper bake times consistency and quality
- Work multiple cooking stations as needed including pizza build prep saute and oven operation areas
- Follow all recipes portioning standards and presentation guidelines with 100 percent accuracy
- Maintain strong knowledge of dough preparation fermentation stretching topping and baking techniques
- Ensure all food is prepared and served in a timely manner while maintaining high-quality standards
- Use knives dough tools ovens and kitchen equipment safely and efficiently
