The current job opening is for the position of Cook II (Full-Time) at The Romer House Waikiki in Hawaii. This role requires preparing food items for multiple outlets including Restaurants, Room Service, Employee Cafeteria, and Banquets according to standardized recipes, ensuring the highest quality and presentation standards. The Cook II will maintain cleanliness, sanitation, and safety in kitchen areas while striving to minimize waste and optimize production costs. Responsibilities also include food preparation for buffets and banquet events, supporting various kitchen stations as needed, and upholding health department and company standards related to food handling and safety. This position demands the ability to work flexible hours and perform medium physical work including lifting up to 50 pounds and enduring temperature variations. Proficiency in diverse cooking techniques such as charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking is essential for success in this role. Candidates with culinary experience and knowledge of hotel food preparation standards are preferred for this important role within Highgate Hotels' operations.

Job Duties

  • Maintain cleanliness and organization of all storage areas
  • complete necessary food and station preparation prior to restaurant opening
  • prepare and display buffet food items per hotel standards
  • recognize quality standards in fresh vegetables, fish, dairy, and meat products
  • maintain clean and sanitary environment with proper handling, storage, and sanitation
  • prepare food for banquets following banquet event orders
  • prepare and service food for employee cafeteria as specified
  • prepare all foods following hotel standard recipes
  • prepare specials under chef supervision
  • breakdown buffets and kitchen line, storing food and equipment properly at meal end
  • work banquet food station as scheduled
  • know location and operation of fire extinguishing equipment
  • practice safe work habits to avoid injury
  • use production charts as per hotel standards
  • support any kitchen position in need
  • follow health department and company regulations on food and storage safety
  • operate and maintain cleanliness of all kitchen equipment
  • maintain a clean-as-you-go policy
  • assist in food storage and rotation
  • sign keys out and in under supervision as needed
