The role of Cook II (Advanced Line Cook) under the guidance of the Sous Chef is critical within San Manuel’s culinary operations. This position centers on preparing cuisine items using approved recipes to consistently deliver quality meals to guests. The Cook II is responsible for adhering to all Food & Beverage/Culinary Management cooking methods and ingredient standards to maintain the excellence that San Manuel is known for. Precision and consistency at the workstation are key, from maintaining flavor profiles and presentation to managing production timelines and food safety practices. This role requires not only skilled culinary technique but also a dedication to teamwork, a positive attitude, and a pride in representing the culinary team’s best-in-class culture.

The Cook II must maintain full compliance with health codes and San Manuel Casino standards, ensuring all food products, equipment, and kitchen areas are sanitized and organized at all times. Advanced knowledge of basic and specialty food products such as meats, poultry, fish, produce, and dry goods is essential, along with proficiency in using specialized kitchen equipment including woks, rotisseries, smokers, and teppanyaki grills. Knife skills and multitasking ability are critical to success in this role, enabling seamless food preparation during high-volume service periods. This position also involves the vigilant implementation of food rotation policies like FIFO, to guarantee freshness and safety while minimizing waste.

Job Requirements

  • High school diploma or GED
  • Culinary arts degree preferred
  • Minimum three years experience in high-volume line or production cooking in full-service or food service establishment
  • Ability to perform physical demands including lifting standing walking stooping kneeling and operating kitchen equipment
  • Must obtain and maintain a Food Handler's Card
  • Ability to work flexible hours including evenings weekends and holidays
  • May require gaming license at discretion of San Manuel Tribal Gaming Commission
  • No driving responsibilities required

Job Qualifications

  • High school diploma or GED
  • Culinary arts degree from accredited school preferred
  • Minimum three years experience in high-volume line or production cooking
  • Experience in specialty cuisine menu production preferred
  • Knowledge of food preparation and presentation
  • Ability to follow procedures and take direction
  • Ability to read recipes production lists and other pertinent paperwork

Job Duties

  • Maintains designated workstation ensuring recipe consistency in flavor profiles quality and appearance and production time frames adherence
  • Ensures workstation is fully stocked for forecasted business flow and restocks before end of shift
  • Demonstrates advanced knowledge of basic and specialty food products and operates standard and specialty kitchen equipment
  • Applies advanced knife skills and multitasks to ensure uninterrupted guest service
  • Follows the food rotation method FIFO including labeling dating and disposal of food items and proper waste logging
  • Reports any injuries accidents or unsafe work environment issues immediately
  • Performs other duties as assigned to support efficient department operations
