The Food Production Manager role at Westin/Solea Carlsbad Resort & Spa is an essential position responsible for managing all facets of food production specifically related to banquets. The position involves preparing high-quality food in a timely and consistent manner following predefined standards of cleanliness, safety, and operational efficiency. The manager oversees the setup of food stations with the required mise en place to service various banquet functions efficiently. This role requires the individual to adhere strictly to sanitation and safety practices to ensure total customer satisfaction. Since the hospitality industry presents cyclical business demands, the Food Production Manager must demonstrate flexibility with working schedules, attending all mandatory training sessions, meeting hotel attendance standards, and maintaining compliance with all hotel policies and procedures.

Job Requirements

  • High school or equivalent education required
  • Certified Cook level or higher
  • 3-7 plus years cooking experience in a full service restaurant experience is required
  • Must have valid Food Handler's Card
  • Ability to obtain and/or maintain any government required licenses, certificates or permits
  • Regular attendance as per company standards
  • Compliance with hotel rules and regulations
  • Ability to work varying schedules
  • Ability to operate kitchen machinery
  • Physical ability to lift up to 50 pounds regularly
  • Ability to work in extreme temperatures
  • Good communication skills
  • Ability to speak, read, write and understand the primary language used in the workplace

Job Duties

  • Prepare food items for customers using a quality predetermined method in a timely and consistent manner
  • Set up station with predetermined mise en place required to service all banquet functions
  • Practice sanitation and safety daily to ensure the total customer satisfaction
  • Consult with Kitchen Supervisor, Sous Chef, or Executive Chef on a daily basis
  • Participate in long range planning
  • Support and make recommendations for ongoing hotel programs with continuous improvement in networking
