This particular opportunity is for a full-time, non-management position within The Ritz-Carlton's main kitchen team. As a culinary professional in this role, you will play an integral part in maintaining the high standards of food preparation and presentation that The Ritz-Carlton is famous for. The role focuses on the preparation and cooking of special meals and substitute items, ensuring the right temperature and quality of food, and adhering rigorously to recipes and presentation standards. You will be responsible for regulating cooking appliances such as ovens, broilers, grills, and roasters, as well as managing food thawing and food logs efficiently. The role requires a keen eye for detail to ensure proper portioning, garnish, and the overall quality and quantity of prepared food.

In addition, you will act as a vital communication link between the kitchen and Food & Beverage service staff, keeping them informed of daily specials, out-of-stock items, and excess food that can be used creatively in daily specials. Your responsibilities will extend to preparing both hot and cold foods while maintaining strict quality and safety standards. You will assist management with various employee-related functions including hiring, training, scheduling, evaluating, counseling, disciplining, and motivating team members, thus helping to foster a positive and productive kitchen culture.

Your work environment will demand adherence to company policies, safety regulations, and professional conduct, including maintaining a clean and professional appearance and protecting proprietary information and company assets. You will be expected to handle physically demanding tasks such as standing for extended periods, lifting objects of up to 25 pounds, and performing motions such as bending, twisting, and stooping as part of optimum kitchen operations. Job Requirements

  • At least 3 years of related culinary experience
  • Ability to work full time
  • Physical ability to stand, lift, and perform kitchen duties

Job Qualifications

  • Technical, trade, or vocational school degree

Job Duties

  • Prepare special meals or substitute items
  • Regulate temperature of ovens, broilers, grills, and roasters
  • Pull food from freezer storage to thaw in the refrigerator
  • Ensure proper portion, arrangement, and food garnish
  • Maintain food logs
  • Monitor the quality and quantity of food that is prepared
  • Communicate assistance needed during busy periods
  • Inform Chef of excess food items for use in daily specials
  • Inform Food & Beverage service staff of menu specials and out of stock menu items
  • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
  • Prepare cold foods
  • Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, and motivating and coaching employees
  • Follow all company and safety and security policies and procedures
  • Report maintenance needs, accidents, injuries, and unsafe work conditions to manager
  • Ensure uniform and personal appearance are clean and professional
  • Maintain confidentiality of proprietary information
  • Protect company assets
  • Anticipate and address guests' service needs
  • Speak with others using clear and professional language
  • Develop and maintain positive working relationships with others
  • Support team to reach common goals
  • Listen and respond appropriately to the concerns of other employees
  • Ensure adherence to quality expectations and standards
  • Stand, sit, or walk for an extended period of time
  • Reach overhead and below the knees, including bending, twisting, pulling, and stooping
  • Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance
