The Cook, also known as the Grill Master, plays a crucial role at El Pollo Loco by preparing grilled and hot food items with precision and care, aligning with company standards for preparation, quality, and presentation. The Grill Master is responsible for managing the preparation, marination, seasoning, cooking, stocking, and timely rotation of chicken and other grilled proteins. They ensure all cooked proteins meet the company’s safety and quality standards, maintaining proper serving temperatures and monitoring holding times to preserve food quality.
Beyond cooking, the Grill Master also ensures the cleanliness and sanitation of the entire work area, including all equipment, tools, storage containers, grills, and hoods. Attention to food safety and hygiene is paramount, as is the ability to assist across multiple kitchen stations, including the hot and cold prep lines. Job Requirements
- Obtain food handler certification promptly upon hire
- One or more years of previous restaurant cooking experience preferred but not required

Job Duties
- Prepare, marinate, season, cook, stock and rotate chicken and other grilled proteins according to company standards
- Receive orders, cut cooked chicken, and arrange proteins for proper presentation
- Monitor holding time for grilled proteins and take corrective actions when hold time expires or product quality fails to meet standards
- Maintain and ensure all cooked proteins are at proper serving temperature
- Thaw and store raw proteins to meet projected needs
- Inspect chicken and raw proteins for quality prior to marinating or grilling
- Clean and sanitize work area, equipment, tools, grills and hoods
- Maintain proper quality and quantity levels of meats during the shift
- Follow all food safety, rotation, and sanitation policies
- Assist on hot and cold prep lines as needed
- Strive to meet or exceed customer expectations and satisfaction
- Work collaboratively with team members and management
- Assist in training new cooks
- Perform other duties as assigned by management
