The role at Heimat Kitchen is a pivotal culinary position responsible for preparing all mise-en-place for the assigned station and service periods. This position demands proficiency in handling vegetable accompaniments and a deep expertise in the preparation and cooking of protein dishes. Additionally, the role entails supporting breakdown procedures at the end of service, including inventory management, equipment maintenance, and preparation requests for subsequent days. This full-time position offers a compensation of $18 per hour and expects candidates to have a minimum of 2-4 years of prior experience in kitchen preparation and cooking within a fine dining environment. Job Requirements

  • Minimum of 2-4 years kitchen preparation and cooking experience in fine dining
  • ability to communicate effectively with management, guests, and staff
  • ability to work standing for a minimum of 8 hours daily
  • strong physical stamina to lift up to 30 pounds regularly
  • ability to work in extreme temperatures including freezers and hot kitchen areas
  • capability to stand and maintain mobility for up to 7 hours
  • ability to bend, stoop, squat, and perform repetitive motions
  • able to push and pull carts/equipment up to 250 pounds
  • possess basic computational and computer skills
  • knowledge of POS system
  • ability to speak, read and write the primary workplace language
  • capacity to work minimum 40 hours per week

Job Duties

  • Prepare all mis-en-place for the station and service
  • manage vegetable accompaniments for protein dishes
  • develop and assist with daily tasting menu and mise-en-place
  • utilize various cooking styles including whole roast, quick sear, sous vide, and slicing
  • ensure speed, accuracy, and temperature control for protein dishes
  • maintain clean, efficient, and respectful work environment
  • communicate effectively with kitchen staff and ensure smooth service operations
  • collaborate to ensure compliance with food preparation standards, ticket times, and flavor profiles
  • maintain hygienic, safe work area consistently
  • assist with AM opening duties and ensure timely service setup
  • motivate and help production cooks and externs to finish ahead of schedule
  • butcher and process fish, seafood, and meat as per guidelines
  • manage breakdown procedures including inventory, cleanup, and preparation requests for following days
  • document recipe variations and preparation techniques
  • update chefs and line cooks regularly on progress
  • operate equipment according to safety and maintenance protocols
  • ensure accurate receipt and storage of all products
  • provide required herbs and oils for station service
  • assist other stations when necessary
  • communicate menu conflicts and plan for upcoming events
