The Head Cook role at gategroup is a critical position responsible for leading the preparation and cooking of various food items according to airline recipes and strict quality standards. This role requires a hands-on leader who monitors the production activities of the cooking team to ensure timely and quality food delivery that meets health and safety regulations. The Head Cook assembles food items and equipment per airline specifications and works closely with the Hot Food leadership team to maintain continuous production quality and operational efficiencies. The role demands a strong focus on sanitation and compliance with regulatory hygiene standards, proper documentation such as inventory and temperature logs, and efficient recipe conversion to meet dynamic production needs.

This position not only demands exceptional culinary skills and experience in a high-volume institutional catering environment but also requires excellent communication skills and the ability to work collaboratively within a team. Candidates should be comfortable handling a variety of food products including seafood, meat, poultry, fruits, and vegetables while maintaining safety protocols. The work environment involves exposure to extreme temperature changes, noise, and physical activity such as lifting and moving heavy equipment and supplies regularly during shifts of over 8 hours. Job Requirements

  • Handle various food products such as seafood, beef, pork, poultry, fruits, and vegetables
  • Handle knives and kitchen tools properly
  • Work assigned schedule which may vary and could include weekends and holidays
  • Work overtime when required
  • Arrive to work on-time
  • Complete paperwork and related administrative duties
  • Comply with company policies
  • Ability to lift, push, pull, and move product, equipment and supplies up to fifty (50) pounds frequently during shift
  • Regularly stands, bends, lifts, and moves intermittently during shifts of 8+ hours
  • Will be exposed to extreme temperature changes and noise
  • Willingness to work in a high-volume, fast-paced kitchen environment

Job Qualifications

  • Culinary degree and/or cook certification is preferred
  • At least 2 years of experience cooking in a high volume institutional catering environment is preferred
  • Experience with maintaining temperature logs for all food items prepared
  • Recipe conversion experience required to accommodate the kitchen's daily production needs
  • Ability to read, write, and follow food specifications and menu guidelines
  • Effective communication skills with supervisors and co-workers

Job Duties

  • Assembles equipment according to airline specifications following procedures and assembly diagrams
  • Packages and prepares alcoholic beverages for airline flights
  • Keeps production areas in compliance with sanitation standards and customer requirements
  • Documents inventory in compliance with requirements
  • Follows directions
  • Works as a member of a team
  • Supports Hot Food leadership in monitoring team’s production quality and efficiencies
  • Additional duties may be assigned as deemed necessary by management
