The Head Cook role at Gate Gourmet is an essential leadership position within the culinary team, primarily responsible for preparing and cooking various food items according to precise recipes and standards. This role not only focuses on food preparation but also involves overseeing the production activities of other cooks, ensuring that all meals meet the quality, safety, and efficiency standards expected by airline clients and customers. The Head Cook acts as a key member of the kitchen leadership, supporting the Hot Food leadership by monitoring team performance, production quality, and operational efficiencies. This includes adhering to sanitation standards, documenting inventory accurately, and complying with company and regulatory policies.
Candidates for this role should be highly motivated and engaged, capable of working effectively both independently and as part of a collaborative team. The work environment involves handling a variety of food products including seafood, beef, pork, poultry, fruits, and vegetables, with the necessity of maintaining rigorous temperature controls and sanitation standards. Physical stamina is important, as the role requires frequent standing, bending, lifting, and moving, sometimes involving heavy items up to 50 pounds and exposure to temperature extremes and noise.

Job Requirements
- Handle various food products such as seafood, beef, pork, poultry, fruits, and vegetables
- handle knives and kitchen tools properly
- work assigned schedule which may vary and could include weekends and holidays
- work overtime when required
- arrive to work on-time
- completes paperwork and related administrative duties
- complies with company policies
Job Qualifications
- Culinary degree and/or cook certification is preferred
- at least 2 years of experience cooking in a high volume institutional catering environment is preferred
- experience with maintaining temperature logs for all food items prepared
- recipe conversion experience required to accommodate the kitchen’s daily production needs
- read, write, and follow food specifications and menu guidelines
- communicate effectively with supervisors and co-workers
Job Duties
- Assembles equipment according to airline specifications following procedures and assembly diagrams
- packages and prepares alcoholic beverages for airline flights
- keeps production areas in compliance with sanitation standards and customer requirements
- documents inventory in compliance with requirements
- follows directions
- works as a member of a team
- supports hot food leadership in monitoring team's production quality and efficiencies
- additional duties may be assigned as deemed necessary by management
