The role of Dietary Aide and Cook at PruittHealth is essential in ensuring the nutritional well-being and satisfaction of residents. This position involves assisting with food preparation and meal service under the guidance of the Food Service or Dietary Manager or Supervisor. The dietary aide is responsible for preparing palatable, nutritious meals aligned with state and federal regulations and departmental policies. They work closely with the Director of Food Service to efficiently allocate resources, ensuring residents receive appropriate food types, amounts, and consistency to maintain their health and quality of life. This role requires a diligent individual who follows strict food safety protocols, manages proper food storage, and maintains kitchen cleanliness at all times.
This position offers the opportunity to make a meaningful impact by supporting the dietary needs of residents, contributing to their overall comfort and wellness. Duties include preparing various meals, snacks, and beverages; serving nourishments and meals on schedule; adhering to diet orders and infection control policies; cleaning and maintaining kitchen equipment and work areas; and monitoring resident acceptance of menu items. The dietary aide/cook also assists with supervising kitchen staff, enforcing proper food handling techniques, and ensuring compliance with regulatory standards during state inspections.
Candidates for this position should have at least one year of institutional food service experience as a cook, preferably within long-term care food production. Job Requirements
- Sufficient education to demonstrate functional literacy
- minimum one year institutional food service experience as a cook
- ability to work all shifts including weekends and holidays
- ability to follow safety and infection control policies
- ability to perform physical tasks related to food service such as lifting and standing for long periods
- willingness to participate in continuing education and training
- ability to report injuries and follow established safety procedures

Job Duties
- Assists cook in the preparation of meals, salads, desserts, snacks or other dishes for patients/residents, prepares between-meal nourishments like sandwiches, follows diet orders and NPO diet orders, serves nourishments in accordance with procedural guidelines, properly stores leftovers and opened food, follows procedures for serving partner meals, offers menu substitutions and records them, complies with infection control policies in the work area, delivers trays to patients/residents on halls and in dining area, assists with serving and pouring beverages such as juice, milk, water, tea, makes coffee/tea as requested, cleans all tables in dining area after each meal, cleans work area at the end of shift including sweeping and mopping, cleans kitchen equipment such as carts, tables, counters, ice machine, buckets, blender, mixer, meat slicer, freezer, refrigerator, stove, steamer, garbage disposal, dish machine, coffee/tea maker, steam table, removes garbage from kitchen areas and hoses out containers, scrapes and washes dishes, pots and pans, records freezer and walk-in refrigerator temperatures, maintains dishwasher and checks water temperature and chemical levels, maintains supply stock and properly stores items, sets up tray line and performs tray line service, operates dish machine and kitchen equipment, cleans and maintains serving equipment, follows food handling, preparation and storage techniques that comply with laws and regulations, follows recipes and prepares meals according to dietitian menu cycles, assists with supervision of kitchen staff, continually cleans work areas to prevent waste, prepares and maintains supply of food substitutes for resident preferences, inspects trays after meal service and reports resident acceptance, uses food preparation equipment according to manufacturer instructions, follows proper cleaning and maintenance schedules, handles and disposes food supplies in compliance with regulations
