The role in focus is a Restaurant Kitchen Support position designed to assist daily food preparation and restaurant operations under general supervision. This position is integral to maintaining smooth kitchen workflows, ensuring the presentation and quality of food meets the set standards. The job involves a variety of tasks such as menu preparation support, food set-up, cooking assistance, and ensuring cleanliness and safety in the kitchen. As part of the Pueblo’s team, employees are expected to uphold high personal sanitation standards, adhere strictly to food safety guidelines including temperature controls, and engage actively in maintaining cleanliness of kitchen equipment and storage areas. The position requires reliable attendance, punctuality, and a strong commitment to teamwork and safety. Collaboration with fellow kitchen staff and other restaurant team members is critical to provide a seamless dining experience across multiple restaurant outlets, ranging from buffet line service to fine dining settings.
Candidates for this position will engage in hands-on food preparation including setting up hot and cold food lines, ensuring proper portions and garnish, managing food temperatures with thermometers, and assisting in training new personnel. In addition to operational duties, employees will contribute to problem-solving related to equipment issues and supply management, ensuring spoiled or defective food and supplies are promptly handled according to safety and quality standards. The restaurant environment may present various physical demands such as balancing, lifting, crouching, and standing for extended periods. Work shifts can vary, including evenings, weekends, and holidays, reflecting the dynamic nature of restaurant operations. Job Requirements
- Must complete New Mexico Food Handlers course upon hire
- Must pass a stringent background investigation
- Must undergo pre-employment and random drug screenings
- Ability to lift up to 25lbs regularly and 50lbs occasionally
- High school diploma, GED preferred but may be substituted with relevant work experience
- Reliable attendance and punctuality
- Ability to work varied shifts including evenings, weekends and holidays
- Ability to perform physical activities such as balancing, crouching, kneeling, stooping, lifting, pulling, pushing, reaching, standing and walking for prolonged periods
Job Qualifications
- One year experience in restaurant or food service
- Knowledge of buffet hot and cold line, deli and fine dining operating requirements
- Ability to follow instructions and communicate effectively
- Ability to adapt to different cuisines and cooking styles
- Knowledge of food preparation, presentation methods and quality standards
- Familiarity with safety procedures and sanitary regulations
- Strong teamwork and collaboration skills
- Knowledge of supplies, equipment and inventory control
- Ability to maintain proper food temperature and rotation
Job Duties
- Assist in the development and preparation of menus, food set-up, service and cooking
- Follow prescribed menu in setting up hot and cold food lines, choose proper utensils and ensure appropriate temperatures for menu items
- Serve a range of hot and cold food items from counters and steam tables, add relishes and garnishes according to instructions, ensure appropriate portions
- Ensure thermometers are on hand and food temperature requirements are maintained
- Perform cleanliness activities of entire kitchen including walk-in refrigerator, freezer and dry storage
- Maintain highest standards of personal sanitation
- Open and/or close as necessary or assigned
- Attend to day to day problems and needs concerning equipment and food supplies, detect and ensure disposition of spoiled or unattractive foods and defective supplies/equipment
- Assist in training personnel
- Know proper food and safe handling temperatures
- Use safety wear and gloves when appropriate
- Know proper food rotation procedures
- Perform additional duties as necessary or assigned
- Maintain punctual and regular attendance according to schedule
