The role of Cook 3 at Delaware North Sportservice in Comerica Park is a seasonal, hourly position with competitive pay ranging from $19.25 to $21.00 per hour. This role is designed for experienced culinary professionals who have at least three years of back-of-the-house food-service experience and are ready to lead and inspire kitchen teams on a visible basis. As a Cook 3, you will play a pivotal role in not only preparing food but also in supervising and training junior kitchen staff such as Cook 1s and dishwashers. You will be expected to uphold all health codes and sanitation regulations meticulously while operating kitchen equipment efficiently. The position requires you to be deeply involved in menu planning, quality control, portion size compliance, and inventory and waste management to maintain smooth kitchen operations.

In addition to preparing and delivering food at the highest standards, the Cook 3 position entails monitoring labor and overhead costs to optimize the kitchen's performance. This means you will partner closely with management to ensure that food is fresh, properly stored, and served at appropriate temperatures. Your leadership qualities will be crucial in maintaining an organized, clean, and sanitary work environment while managing daily opening, closing, and side work duties. Physical stamina is essential, as the role involves standing and walking for extended periods, maneuvering in a lively, often noisy kitchen environment, and handling loads potentially up to 35 pounds. The shifts are primarily during evenings, weekends, and events, offering both challenges and excitement within a world-class sports venue.

Job Requirements

  • Must be able to lift up to 35 lbs to and from freezers and ovens, reach up to seven feet, twist, bend, and squat
  • Standing and walking for the entire length of shift in moderate to high noise levels
  • Manual ability to chop, mix, blend, whip a variety of foods and liquids and operate kitchen equipment
  • Exposed to variable temperatures

Job Qualifications

  • At least three years of previous experience in a back-of-the-house food-service position
  • Ability to read and comprehend prep sheets and recipes
  • Basic math skills with the ability to calculate and follow recipe measurements

Job Duties

  • Review menus and customer orders to determine type and quantities of food to be prepared and comply with all portion sizes, quality standards, department rules, policies, and procedures, ensuring proper food temperatures are maintained, food is stored correctly, the freshness and quality of all menu items, and package all products to proper specifications
  • Train new Cook 1s and Dishwashers as needed
  • Keep workstation, coolers, and equipment clean, organized, sanitized, and sufficiently stocked, as well as maintaining the kitchen and storage facilities in a sanitary condition
  • Use waste control guidelines and record all waste on the spoilage sheet
  • Perform opening, closing, and side work duties and end-of-day inventory in accordance with guidelines
