The Cook position at Brown University Dining Services is a full-time, regular employee role working 40 hours per week across 41 weeks annually. The position is governed by Dining Services Union Rates and entails working on-site within the university's dining facilities. This role is central to the production and service of daily menu items and catered meals, adhering strictly to university-established procedures and high standards of sanitation, food safety, and quality assurance. Reporting under general supervision, the Cook is responsible for executing various essential culinary tasks. This includes vegetable and fruit preparation, salad and dressing preparation, egg cookery, grill work, sandwich assembly, stock and soup preparation, basic sauce and dessert preparation, and more advanced cooking techniques such as broiling, roasting, sautéing, and deep frying.
The position requires strict adherence to standardized recipes and procedures and an understanding of kitchen organizational structure and workflow. Safety is paramount, especially when working with kitchen equipment, hot surfaces, and cleaning chemicals. The Cook must also maintain an immaculate and sanitary workspace, ensuring all kitchen equipment is operated, cleaned, and maintained properly. Additionally, this role fosters teamwork, encourages skill development by preparing for potential advancement to the role of Second Cook, and insists on a professional appearance and workplace demeanor.

Job Requirements
- High school diploma or equivalent
- one year experience as a Cook’s Helper or demonstrating mastery of cook tasks
- ability to perform production tasks with speed, safety, efficiency, and accuracy
- physical ability to stand, walk, bend, kneel and use hands for kitchen tasks
- ability to lift up to 50 pounds
- ability to push or pull carts up to 75 pounds
- use of personal protective equipment as required
- adherence to safety guidelines and cut resistance glove usage
- ability to tolerate heat and cold
- ability to operate kitchen equipment safely
- willingness to work onsite full time
- pass Brown University education and records check
Job Qualifications
- Ability to read, write and communicate effectively in English
- basic math skills for recipe conversions
- ability to understand symbols of weight and measure
- one year experience as a Cook’s Helper or equivalent
- preferred two years post-secondary culinary school attendance
- willingness to promote a diverse and inclusive campus community
Job Duties
- Prepare vegetables and fruits
- prepare salads and salad dressings
- cook eggs and work on grills
- assemble sandwiches and fillings
- prepare stocks and soups
- prepare basic sauces and simple desserts
- perform sautéing, breading, deep fat frying, broiling, roasting, braising, boiling, glazing, and stewing
- operate and maintain kitchen equipment
- follow standardized recipes and procedures
- observe safety, sanitation, and food handling standards
- coordinate efforts to accomplish tasks
- maintain an uncluttered and sanitary workspace
- assist subordinates and promote teamwork
- observe all kitchen and university policies
- improve skills and demonstrate readiness for second cook duties
- maintain neat and professional appearance
- perform other tasks as requested
