The Prep Cook role within Mary Free Bed's Nutrition Services Department embodies this dedication to quality and care. Reporting to the Kitchen Supervisor, the Prep Cook is integral to ensuring that patients, staff, and visitors receive nutritious, high-quality meals prepared according to federal, state, and local health standards. This non-exempt position focuses on preparing food items listed on daily production sheets, completing all necessary documentation, and maintaining cleanliness and operational standards of kitchen equipment. The Prep Cook collaborates closely with chefs and team members to efficiently serve customers in a friendly and professional manner. By adhering to policies such as HACCP guidelines and utilizing approved food recipes, the Prep Cook ensures safety, quality, and standard portion control across meal services.

In addition to food preparation, this position requires a strong commitment to customer service, teamwork, and a willingness to address and resolve customer concerns promptly. The role also includes responsibilities related to quality improvement, including identifying issues and contributing to solutions that enhance patient and family satisfaction. Physical demands involve tasks such as moving around the kitchen, handling equipment and food supplies, and occasional lifting of up to 25 pounds, all performed in line with ADA accommodations when necessary.

Job Requirements

  • High school diploma or GED equivalent preferred
  • 1 to 6 months related experience and or training or equivalent combination of education and experience
  • Food Handler's Permit by applicable state and county
  • ServSafe training and certificate as required by applicable state and county
  • Good communication and customer service skills
  • Good hand-eye coordination
  • Ability to follow written and oral directions
  • Ability to use standard measures required

Job Duties

  • Obtain daily production schedule and preparation requirements from the Chef
  • Prepare items on production sheets following established quantities and recipes
  • Complete and utilize daily production worksheets and waste log sheets
  • Taste completed meals to ensure quality
  • Operate and clean equipment per department procedures after each use
  • Store, label and date all food items according to policy and HACCP guidelines
  • Complete all required documentation, reports, and logs
  • Comply with federal, state and local health and sanitation regulations and department sanitation procedures
  • Take orders from customers and prepare items requiring short preparation time
  • Serve customers in an efficient and friendly manner
  • Complete orders from steam tables and grill and serve customers at multiple stations
  • Utilize approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control
  • Follow HACCP guidelines to ensure quality and safety of food supply
  • Resolve customer concerns
  • Perform other job duties as assigned
