The VA Medical Center’s Nutrition and Food Service department in Reno, NV is currently seeking a dedicated Cook, WG 6, to join their team. This is a permanent, full-time position with a pay range of $25.07 to $29.23 per hour and does not offer promotion potential. The role is fundamental in preparing nutritious and high-quality meals specifically designed to meet regular and therapeutic dietary requirements such as diabetic, low sodium, low protein, and gluten-free diets. The Cook will operate independently, handling the preparation and cooking of entrees and desserts following menus, recipes, and production sheets to meet quantity and quality standards.

The responsibilities of this position extend beyond simple cooking duties; the Cook must be skilled in various cooking methods including broiling, roasting, baking, frying, boiling, steaming, stewing, braising, and grilling to prepare meats, fish, poultry, and other food items properly. Expertise in food portioning, meal timing coordination, recipe adjustment for large quantities, and food safety procedures is essential. Additionally, the position requires careful handling of kitchen equipment, adherence to sanitation and safety standards, and manual dexterity for precise food preparation tasks.

Job Qualifications

  • Experience in quantity food service healthcare environment

  • Ability to prepare soups, stocks, gravies, sauces, and puddings without packaged mixes
  • Experience adjusting recipes for quantity cooking
  • Skill in hand slicing meat to specific size or weight
  • Knowledge of food safety and quality control including temperature maintenance
  • Ability to plan cooking processes for timely meal production
  • Capacity to portion and serve food in standard sizes
  • Proven ability to operate commercial kitchen equipment safely
  • Strong manual dexterity and coordination
  • No educational substitution

Job Duties

  • Prepare and cook a variety of regular and therapeutic diet entrees and desserts independently
  • Follow menus, production sheets, and recipes to prepare needed quantities
  • Cook hot cereals, concentrated or dehydrated soups, sauces, gravies
  • Grill eggs, hamburgers, meat patties, pancakes, French toast, assemble cold sandwiches
  • Use various cooking methods including broiling, roasting, baking, frying, boiling, steaming, stewing, braising, grilling
  • Slice meat items by hand to specific size or weight specifications
  • Prepare fresh, canned, frozen vegetables and bake frozen potatoes and pre-made dough
  • Prepare and heat convenience and pureed foods, adjust consistencies
  • Wash, peel, cut fruits and vegetables by hand or machine
  • Assemble and mix salads and dessert items
  • Coordinate cooking processes to ensure meals are served on time and at proper temperature
  • Present and garnish food attractively
  • Make a variety of desserts such as cobblers, brownies, cookies, and pastries
  • Weigh, measure, and assemble ingredients for regular and modified diets
  • Minimize food waste and preparation time
  • Pan foods for bulk rethermalization according to guidelines
  • Cover, date, and store leftovers following policies
  • Operate kitchen equipment safely including ovens, grills, slicers, mixers, steam kettles, blenders, processors, scales
