Job Description

The Cook position within the Lexington VA Healthcare System is a full-time, permanent role classified under the WG-6 pay scale, offering an hourly wage range of $24.45 to $28.53. This role involves preparing a wide variety of meals, including regular and therapeutic diets catering to specific health conditions such as diabetes, low sodium, low protein, and gluten-free requirements. The cook is responsible for following detailed menus, production sheets, and recipes to ensure meals are prepared accurately in the appropriate quantities. This position requires expertise in diverse cooking methods, including grilling, broiling, roasting, frying, boiling, steaming, stewing, braising, and baking. Duties also extend to the preparation of desserts, cold sandwiches, pureed foods, and precise portion control, ensuring consistency and adherence to dietary guidelines.
Working within a fast-paced kitchen and dish area subject to temperature extremes, this role demands physical stamina, manual dexterity, and acute attention to safety and hygiene standards. Cooks operate various kitchen equipment and must follow strict cleaning and sanitization protocols. The position supports meal preparation that respects therapeutic dietary needs and contributes directly to the health and satisfaction of Veterans receiving care. Scheduled shifts rotate, including weekends, holidays, and different times between 6:00 am to 7:30 pm. Successful candidates must be U.S. citizens or nationals and are subject to suitability determinations, background investigations, and completion of federal onboarding requirements.

Job Requirements
- U.S. citizenship
- suitability for federal employment as determined by background investigation
- successful completion of drug screening as required
- selective Service registration for males born after 12/31/1959
- completion of online onboarding with acceptable identification documents
- completion of all application requirements
- ability to stand continuously, walk, bend, reach, push, pull, lift up to 40 lbs unassisted
- ability to work rotating shifts including weekends, holidays, and varying shifts
- willingness to comply with sanitation and safety standards
- ability to wear hair covering, clean uniform, and disposable gloves as required
- exposure to temperature extremes and kitchen environment
- ability to perform food preparation in patient care settings with possible exposure to contagious diseases
- physical dexterity to operate kitchen equipment and handle sharp objects

Job Duties
- Independently prepares and cooks a variety of items including regular and therapeutic diet entrees and dessert items
- follows menus, production sheets, and recipes to prepare items in the quantity needed
- grills eggs, meat patties, pancakes, French toast
- broils meats
- makes cold sandwich fillings and assembles a variety of sandwiches
- uses a variety of methods to prepare meats, fish, and poultry including broiling, roasting, baking, frying, boiling, steaming, stewing, braising, and grilling
- slices meat items by hand, conforming to specific size requirements or weight specifications
- prepares fresh, canned, and frozen vegetables
- bakes frozen potatoes, pre-made cookie dough, and muffin batters
- prepares and heats convenience items, and prepares pureed foods and adjusts consistency with thickeners
- washes, peels, and cuts fruits and vegetables
- assembles and mixes salad ingredients and dessert items, including gelatin molds and fruit crisps
- plans cooking processes to produce meals on time and at the proper temperature which may require coordination of cooking several items with different cooking times
- makes a variety of desserts such as cobblers, brownies, cookies, and pastries
- weighs, measures, and assembles ingredients for regular and modified diets
- operates a variety of kitchen equipment and follows appropriate safety procedures
- follows sanitary food handling procedures
- disassembles and reassembles equipment for cleaning
- cleans and sanitizes work areas, and performs deep cleaning tasks when needed
- operates industrial dish machine
- performs other related duties
