Job Description

Management & Training Corporation (MTC) is a well-established organization that operates the Otero County Prison located in Chaparral, New Mexico. The position available is a full-time Cook role at the Otero County Prison. This job offers a competitive wage of $19.27 per hour and includes a comprehensive benefits package. Employees in this position will work with purpose and have the opportunity to contribute positively by providing essential services that support the daily operations of the facility. The cook’s responsibilities include preparing and cooking large quantities of food according to a specified menu and production sheets, ensuring that kitchen equipment and the work environment are maintained in a clean, safe, and sanitary condition at all times.

This role is essential for ensuring that all meals prepared meet quality standards, including special diets prescribed by medical staff for inmates. The cook will supervise inmates assigned to assist in the cafeteria, coordinating their activities which may involve extended periods of standing and sitting. Additionally, the job requires accurate control and counting of knives and other controlled kitchen tools at the start and end of each shift for safety and inventory management. The role demands a high level of attention to detail and the ability to maintain compliance with health and safety regulations.

Candidates for this role are expected to bring at least one year of food service or related experience and must possess a valid food handler’s permit for either New Mexico or Texas. A valid driver’s license in one of these states, and a reliable driving record, is also valued unless waived by management. Job Duties

  • Prepare and cook quantity of food required according to menu and production sheet
  • maintain kitchen equipment in orderly workable condition

  • provide an accurate count of all controlled items at the beginning and end of each shift
  • prepare foods as directed for special facility functions and special diets when prescribed by staff doctor
  • assist in cleaning kitchen work areas following each meal
  • coordinate the work of inmates assigned to assist in the cafeteria, which includes long periods of sitting and standing
