The Cook role at California Fish Grill is a crucial position responsible for preparing and directing the preparation of menu items according to established food production programs, sanitation, and health standards. This position is hourly and non-exempt, reporting directly to the Restaurant General Manager or Training General Manager. The Cook will follow all company policies and local health regulations to ensure safe food handling and preparation practices. Key responsibilities include determining the amount and type of food needed for preparation, setting up steam tables, maintaining daily production records, and ensuring food quality, temperature, and appearance meet the company’s standards.

This role requires working in a typical restaurant environment where the cook must efficiently operate kitchen equipment such as ovens, stoves, slicers, coffee machines, and dishwashers. The Cook will maintain a clean and safe work area, including dishwashing tasks, and take part in food temperature checks before service to maintain food safety. The position demands physical ability to stand, reach, lift up to 50 pounds, bend, kneel, and perform repetitive movements. The Cook must also support the restaurant’s mission, values, and vision by adhering to safety procedures, quality assurance programs, and fostering a positive team environment.

Strong teamwork, sound decision-making, and excellent communication skills are essential in this role, as well as the ability to work under pressure while maintaining composure. The Cook is expected to complete in-service training, adhere to dress codes and hygiene standards, and participate actively in promoting positive guest relations. This role is ideal for someone with prior food service experience who holds valid Food Handler Certification such as ServSafe and demonstrates integrity and responsibility in food preparation and safety practices. Job Duties

  • Prepares or directs preparation of food served using established production procedures and systems
  • Determines amount and type of food and supplies required using production systems
  • Ensures availability of supplies and food or approved substitutions in adequate time for preparation
  • Sets steam table
  • Complies with established sanitation standards, personal hygiene, and health standards
  • Observes proper food preparation and handling techniques
  • Stores food properly and safely, marking date and item
  • Reports necessary equipment repair and maintenance to supervisor
  • Plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved
  • Apportions food for serving
  • Maintains daily production records
  • Keeps work area neat and clean at all times including dishwashing
  • Cleans and maintains equipment used in food preparation
  • Completes food temperature checks before service
  • Completes requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned
