Job Duties
- Review shelter census and estimate and prepare quantities of food as needed
- Refer to menu and instructions, and select meats, fish, fowl and vegetables from storage
- Baste, sear, batter, cut, portions and season according to recipes, menu instructions, or personal judgment
- Cook meat and vegetables, using ovens, griddles, and other utensils
- Apportion and serve food from steam table
- Clean and wash work areas and equipment using proper cleaning agents and equipment
- Follow kitchen cleaning schedule and maintains a clean kitchen
- Sweep and mop kitchen floors and around serving line area, clean and wash kitchen equipment such as bread slicer, mixer, dishwasher serving line, tray belts, etc.
- Clean and wash tables, sinks, walk-in refrigerators, pass through refrigerator, warmer, ovens, fryolator, grill and shelving
- Keep kitchen area and shelves free of clutter
- Clean cook's office, freezer room and the contents within
- Perform other duties as assigned
