The Cook position at SUN Behavioral Health plays a critical role in supporting the dietary services department by preparing nutritious meals that meet the needs of hospital patients, staff, and visitors. Reporting directly to the Director of Dietary Services, the Cook is responsible for preparing, seasoning, and cooking various foods including meats, vegetables, soups, and desserts while ensuring compliance with infection control standards and dietary guidelines. This role is essential not only for food preparation but also for maintaining kitchen cleanliness, assisting in inventory control, and collaborating with dietary staff such as Registered Dietitians to accommodate modified diets.

The cook participates in maintaining a safe workplace by following safety rules, reporting hazards, and supporting a culture of safety and quality within the hospital environment. The position requires close cooperation with food services workers and other hospital staff to ensure meals are prepared on time, properly seasoned, and served according to patient diet orders. The role also involves training food service staff on fire suppression and personal protective equipment (PPE) as required by their job duties. The ideal candidate demonstrates integrity, compassion, and professionalism, while consistently adhering to established standards, policies, and legal requirements including HIPAA confidentiality regulations.

Education requirements include a high school diploma or GED, CPR and hospital-selected de-escalation certification, and a current ServSafe certificate obtained within three months of hire. Experience requirements encompass at least three years in a food service or restaurant setting, with preference given to candidates with hospital dietary and behavioral health experience. Job Duties

  • Determine types and quantities of meats, vegetables and soups to be prepared by reviewing planned menus
  • Determine amount of foods needed to meet weekly menus and submit order to supervisor
  • Ensure meals are ready at specified times
  • Consult with supervisor regarding use of leftovers
  • Consult Registered Dietitian on modified diets as necessary
  • Supervise Food Services Workers when washing, trimming or preparing food
  • Measure and mix ingredients according to approved recipes using blenders, mixers, grinders, slicers
  • Make sauces, soups, stews, casseroles and desserts meeting established dietary guidelines
  • Cook meat, fish and fowl in a variety of ways such as baking, roasting, broiling and steaming
  • Carve meat, fish and fowl into individual servings according to menu combinations and patient diet orders
  • Test foods being cooked to ensure proper cooking temperatures and adjust heat controls as necessary
  • Test foods for balanced seasoning and taste and adjust heat controls as necessary
  • Improve flavor and texture of food by adding ingredients or seasonings
  • Observe infection prevention and control practices at all times
  • Maintain kitchen in a clean, neat and organized manner
  • Assist in serving patients when necessary
  • Perform all aspects of patient care in an environment that optimizes patient safety and reduces the likelihood of medical and health care errors
  • Support and maintain a culture of safety and quality
  • Work with the supervisor to ensure all food service staff are trained on fire suppression and other PPE protection as required by job duties
  • Perform other duties as assigned
