The Cook position at Concordia Dining Services is a pivotal role responsible for supporting the daily production requirements for the dining center, catering, and contract services. This hourly non-exempt staff position is benefit eligible and provides an opportunity for individuals who enjoy working in a fast-paced food production environment. Scheduled shifts during the academic year vary between Sunday to Thursday or Tuesday to Saturday, with summer work being event-based. The general shift hours during the academic year range from late morning to early evening. The Cook plays a crucial role in preparing food through various cooking methods such as baking, frying, broiling, and grilling using industrial kitchen equipment.
As part of dining services, the Cook is responsible for maintaining high food quality standards, food safety, and sanitation according to regulations set forth by health officials at the local, state, and federal levels. In addition to cooking duties, the position demands responsibility in supervising and training student cook helpers, ensuring that they adhere to safety and sanitation guidelines while assisting in food production. The role also involves cleaning and maintaining kitchen equipment and work areas to keep them orderly and in good repair.
Accurate record-keeping is essential in this position, including the completion of service summary reports after each meal and submitting any recipe adjustments required. This data supports the continuous improvement of food service operations. The Cook will also contribute to menu development by assisting with testing and standardizing new recipes under the guidance of the Lead Culinary Supervisor.

Job Requirements
- Previous high volume cooking experience
- Working knowledge of large scale commercial kitchen and production equipment
- ServSafe or similar food safety course certificate, or pass ServSafe exam within first three months of employment
- High school degree or GED

Job Duties
- Prepare food for residential dining, catering, and contract customers according to standardized recipes
- Maintain quality standards in food handling and preparation
- Maintain standards of sanitation and safety as established by health officials
- Maintain cost awareness in preparation and storage to minimize waste
- Assist with testing and standardizing new recipes
- Provide training and guidance to student cook helpers
- Ensure safety and sanitation standards are maintained by helpers
- Maintain equipment and work areas in clean and orderly conditions
- Perform routine preventative maintenance on equipment
- Report equipment repairs as needed
- Complete service summary reports after each meal
- Submit recipe adjustments as needed
- Attend planning meetings and perform other duties as assigned
