The Food Preparation Cook at California Fish Grill plays a crucial role in maintaining the restaurant's reputation for excellence by preparing or directing the preparation of food items in compliance with all sanitation, health, and personal hygiene standards. This role involves ensuring that food production programs and procedures are followed meticulously to deliver freshly prepared meals that meet the expectations of the customers in terms of quality, taste, and presentation. The cook is accountable to the Restaurant General Manager and the Training General Manager, requiring close collaboration with management to align food preparation processes with company standards and operational goals. The position demands responsibility for managing supplies, equipment, and the facility effectively to minimize waste, fraud, and loss. The cook must be well-versed in restaurant operations, sanitation practices, and customer service fundamentals, ensuring that food safety regulations are consistently met to protect guest health. Job Requirements

  • High school diploma or GED
  • 2-3 years related work experience
  • Prior experience in related food service positions
  • Valid ServSafe or other approved Food Handler Certification
  • Ability to stand for extended periods
  • Ability to lift up to 50 lbs
  • Strong interpersonal and communication skills
  • Ability to follow safety procedures and company policies
  • Must comply with uniform and dress code policies
  • Ability to work in a fast-paced environment
  • Willingness to participate in in-service training

Job Qualifications

  • High school diploma or GED
  • 2-3 years related work experience or any equivalent combination of education, training and experience that demonstrates ability to perform duties
  • Prior experience in related food service positions
  • Valid ServSafe or other approved Food Handler Certification
  • High level of integrity and honesty
  • Strong working knowledge of restaurant operations
  • Strong working knowledge of food safety and sanitation
  • Strong working knowledge of quality guest service
  • Knowledge of safe work habits and procedures
  • Knowledge of company rules and procedures including state and federal laws
  • Moderate reading and writing skills
  • Proficient interpersonal relations and communicative skills
  • Ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 lbs or less
  • Manual dexterity

  • Ability to follow written and oral instructions and procedures

Job Duties

  • Prepares or directs preparation of food served using established production procedures and systems
  • Determines amount and type of food and supplies required using production systems
  • Ensures availability of supplies and food or approved substitutions in adequate time for preparation
  • Sets steam table
  • Complies with established sanitation standards, personal hygiene, and health standards
  • Observes proper food preparation and handling techniques
  • Stores food properly and safely, marking date and item
  • Reports necessary equipment repair and maintenance to supervisor
  • Plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved
  • Apportions food for serving
  • Maintains daily production records
  • Keeps work area neat and clean at all times including dishwashing
  • Cleans and maintains equipment used in food preparation
  • Completes food temperature checks before service
  • Completes requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned
