This position is an hourly, non-exempt role reporting directly to the Restaurant General Manager or the Training General Manager. It is integral to the operational success of the restaurant by ensuring the food served meets the highest standards of safety, quality, and presentation. The food preparer/cook role at California Fish Grill is responsible for preparing and directing the preparation of menu items, strictly adhering to established food production programs and procedures. A deep understanding and consistent application of all sanitation, health, and personal hygiene standards are paramount to guarantee food safety. Candidates who thrive in this role are diligent about following production systems, managing supplies efficiently, and minimizing waste, loss, and fraud. Job Duties

  • Prepares or directs preparation of food served using established production procedures and systems
  • Determines amount and type of food and supplies required using production systems
  • Ensures availability of supplies and food or approved substitutions in adequate time for preparation
  • Sets steam table
  • Complies with established sanitation standards, personal hygiene, and health standards
  • Stores food properly and safely, marking date and item
  • Reports necessary equipment repair and maintenance to supervisor
  • Plans food production to coordinate with meal serving hours to preserve quality, temperature, and appearance
  • Apportions food for serving
  • Maintains daily production records
  • Keeps work area neat and clean including dishwashing
  • Cleans and maintains equipment used in food preparation
  • Completes food temperature checks before service
  • Completes requirements for in-service training, acceptable attendance, uniform, dress codes including personal hygiene, and other work duties as assigned
