The role of a Cook at California Fish Grill is an essential position responsible for preparing and directing the preparation of food items according to established procedures and production programs. Accountability in this role extends to adhering to sanitation, hygiene, and health standards, ensuring the safety and quality of all food served. The Cook is responsible for managing food supplies effectively, using facility equipment appropriately, and minimizing loss and waste. Reporting to the Restaurant General Manager and Training General Manager, the Cook plays an important role in supporting meal production schedules to maintain food excellence, temperature, and presentation at all times. This position requires keen attention to detail in food portioning, temperature checks, and daily production records. Additional responsibilities include maintaining a clean and safe work environment, completing required training sessions, and complying with company dress code and hygiene policies.
This position demands a hands-on approach with kitchen equipment such as ovens, stoves, dishwashers, slicers, coffee machines, steamers, mixers, and chef's knives. Workers must demonstrate the ability to work efficiently in a high-pressure and fast-paced restaurant environment with frequent physical activity including standing, reaching, lifting, bending, stooping, and kneeling. The ideal candidate will be someone who is proactive, adaptable, and able to work cooperatively with team members using excellent communication skills. Job Requirements
- High school diploma or GED
- 2-3 years related work experience
- Prior experience in related food service positions
- Valid ServSafe or other approved Food Handler Certification
- Ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 lbs or less
- Ability to perform multiple tasks
- Maintain composure under pressure
- Complete in-service training
- Adhere to uniform and dress codes including personal hygiene
- Knowledge of safe work practices
- Ability to work in a fast-paced environment
- Integrity and honesty
Job Qualifications
- High school diploma or GED and 2-3 years related work experience or any equivalent combination of education, training and experience that demonstrates the ability to perform the duties of the position
- Prior experience in related food service positions
- Valid ServSafe or other approved Food Handler Certification
- High level of integrity and honesty
- Strong working knowledge of restaurant operations
- Strong working knowledge of food safety and sanitation
- Strong working knowledge of quality guest service
- Strong working knowledge of safe work habits and procedures, e.g. knife handling, lifting, carrying trays/bus tubs, etc.
- Strong working knowledge of company rules and procedures, in compliance with and including state and federal laws
- Moderate reading and writing skills
- Proficient interpersonal relations and communicative skills
- Ability to follow written and oral instructions and procedures
- Required to know and follow safe work practices and be aware of company policies and procedures related to job safety
Job Duties
- Prepares or directs preparation of food served using established production procedures and systems
- Determines amount and type of food and supplies required using production systems
- Ensures availability of supplies and food or approved substitutions in adequate time for preparation
- Sets steam table
- Complies with established sanitation standards, personal hygiene, and health standards
- Observes proper food preparation and handling techniques
- Stores food properly and safely, marking date and item
- Reports necessary equipment repair and maintenance to supervisor
- Plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved
- Apportions food for serving
- Maintains daily production records
- Keeps work area neat and clean at all times including dishwashing
- Cleans and maintains equipment used in food preparation
- Completes food temperature checks before service
- Completes requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned
