The role of the Cook at California Fish Grill is essential in maintaining the high standards the restaurant is known for by preparing and directing the preparation of food following established production procedures. The Cook will work closely under the supervision of the Restaurant General Manager and Training General Manager to ensure all sanitation, health, and hygiene standards are rigorously followed. Job Requirements
- High school diploma or GED
- 2-3 years related work experience
- valid ServSafe or other approved Food Handler Certification
- prior experience in related food service positions
- high level of integrity and honesty
- ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 lbs or less
- ability to follow written and oral instructions and procedures
- knowledge of food safety and sanitation
- knowledge of safe work habits and procedures
- ability to work in a fast-paced environment
- maintain composure under urgency and pressure
- ability to operate kitchen equipment such as oven, stove, dishwasher, slicer, coffee machine, steamer, mixer, and chef's knives
Job Qualifications

- prior experience in related food service positions
- valid ServSafe or other approved Food Handler Certification

Job Duties
- Prepares or directs preparation of food served using established production procedures and systems
- determines amount and type of food and supplies required using production systems
- ensures availability of supplies and food or approved substitutions in adequate time for preparation
- sets steam table
- complies with established sanitation standards, personal hygiene, and health standards
- observes proper food preparation and handling techniques
- stores food properly and safely, marking date and item
- reports necessary equipment repair and maintenance to supervisor
- plans food production to coordinate with meal serving hours to preserve excellence, quality, temperature, and appearance
- apportions food for serving
- maintains daily production records
- keeps work area neat and clean including dishwashing
- cleans and maintains equipment used in food preparation
- completes food temperature checks before service
- completes requirements for in-service training, attendance, uniform and dress codes, and other work duties as assigned
