The role of Cook at California Fish Grill is an essential frontline position responsible for the preparation and direction of food production in compliance with established food safety, sanitation, and hygiene standards. This hourly, non-exempt position requires a professional who understands the importance of food quality, waste minimization, and effective use of supplies and equipment. Reporting to the Restaurant General Manager and Training General Manager, the Cook plays a pivotal role in maintaining daily production records, ensuring accurate portioning of food, and supporting food service operations from preparation through service. The individual in this role must be adept at following standardized cooking procedures, managing supplies, coordinating meal times to preserve food temperature and appearance, and performing essential kitchen maintenance tasks. This position requires the ability to work under typical restaurant conditions that include standing for extended periods, handling kitchen equipment safely, and adapting to fast-paced environments. - 2-3 years related work experience or equivalent combination of education, training and experience
- prior experience in related food service positions
- valid ServSafe or other approved Food Handler Certification

Job Duties
- Prepares or directs preparation of food served using established production procedures and systems
- determines amount and type of food and supplies required using production systems
- ensures availability of supplies and food or approved substitutions in adequate time for preparation
- sets steam table
- complies with established sanitation standards, personal hygiene, and health standards
- observes proper food preparation and handling techniques
- stores food properly and safely, marking date and item
- reports necessary equipment repair and maintenance to supervisor
- plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved
- apportions food for serving
- maintains daily production records
- keeps work area neat and clean at all times including dishwashing
- cleans and maintains equipment used in food preparation
- completes food temperature checks before service
- completes requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned
