The role of the Cook at California Fish Grill is a critical position responsible for preparing and directing the preparation of food in alignment with established food production procedures. This hourly, non-exempt position requires adherence to all applicable sanitation, health, and personal hygiene standards. The cook ensures safe food handling, proper storage, and accurate portioning to maintain the quality, appearance, and temperature of food served to guests. This position supports the efficient and effective use of supplies and equipment, aiming to minimize loss, waste, and fraud.

Reporting to the Restaurant General Manager and Training General Manager, the Cook plays a vital role in planning food production schedules that coordinate seamlessly with meal service hours, guaranteeing food excellence at the point of service. The cook also maintains daily production records and ensures that kitchen equipment such as ovens, stoves, dishwashers, slicers, and mixers are kept clean and in good working order by promptly reporting repair or maintenance needs. This role further includes responsibilities such as setting steam tables, completing food temperature checks, and upholding company policies and regulations including safety, confidentiality, and equal opportunity laws.

To succeed in this position, candidates must demonstrate a strong working knowledge of restaurant operations, food safety and sanitation, quality guest service, and safe work habits. The ability to work well under pressure in a fast-paced environment, maintain composure, and communicate effectively with coworkers and management is also essential. The Cook position requires manual dexterity, physical stamina to perform tasks involving lifting up to 50 pounds, standing, reaching, and bending. Additionally, the role involves participation in ongoing in-service training, compliance with uniform and dress codes, and adherence to workplace attendance standards.

Job Duties

  • Prepares or directs preparation of food served using established production procedures and systems
  • determines amount and type of food and supplies required using production systems
  • ensures availability of supplies and food or approved substitutions in adequate time for preparation
  • sets steam table
  • complies with established sanitation standards, personal hygiene, and health standards
  • observes proper food preparation and handling techniques
  • stores food properly and safely, marking date and item
  • reports necessary equipment repair and maintenance to supervisor
  • plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved
  • apportions food for serving
