Job Duties

  • Performs simple calculations, reads, writes and communicates in Chinese and English at or equivalent to high school graduation level
  • Demonstrates the ability to use all necessary food service equipment, including dish machine, food processor and coffee urn
  • Demonstrates a working knowledge of food service sanitation and uses acceptable techniques in handling and serving foods
  • Ensures food safety by observing time and temperature food safety guidelines
  • Maintains a clean, organized department and supervises staff in cleaning assignments
  • Observes all safety policies and procedures and practices safe work habits
  • Understands and observes hospital’s operating policies and procedures
  • Assists in development and maintenance of performance improvement programs
  • Reviews menus and directs food preparation according to orders
  • Supervises dietary aides in food preparation, serving, holding and storage of foods
  • Checks refrigerators daily for food expiration
  • Uses batch-cooking method to reduce overproduction and maintain food quality
  • Coordinates food production to ensure timely service
  • Tastes food and adjusts seasoning
  • Assists in writing and updating standardized recipes
  • Maintains portion control especially for modified therapeutic diets
  • Assists in personnel scheduling and payroll processing
  • Supervises patient tray-line, cafeteria and catering services for efficiency
  • Manages food and supplies inventory and ordering
  • Enforces safety and hygiene standards
  • Performs sales consolidations and manages petty cash
  • Consults with manager on uncertainties
  • Assumes manager’s duties in absence
  • Complies with compliance handbook and ethics code
  • Provides excellent customer service and maintains good relations with staff, patients and guests
  • Leads employee training, recruitment, and performance evaluations
  • Maintains food safety certification and participates in job-related conferences
  • Continuously improves department operations and ensures compliance with hospital policies
  • Performs other duties as assigned
