Job Requirements
- Must possess at least eighth grade education
- Must be able to cook a variety of foods in large quantities
- Must be able to read, write, speak, and understand English
- Must have leadership ability and willingness to work harmoniously with personnel
- Must be knowledgeable of dietary procedures
- Must maintain sanitary and safety standards
- Must be able to make independent decisions
- Must have patience, tact, and cheerful disposition
- Must not pose a threat to workplace health or safety
- Must be able to lift up to 25 pounds
- Must cope with mental and emotional stress
- Must possess functional sight and hearing or prosthetics
- Must meet general health requirements including medical examination
- Must be able to relate and work with ill, disabled, elderly, and emotionally upset individuals
- Must maintain Food Handlers Certification
Job Qualifications
- Must possess at least eighth grade education
- One year dietary experience in supervisory capacity preferred
- Ability to cook large quantities of food
- Knowledgeable of dietary procedures
- Leadership ability and teamwork skills
- Ability to make independent decisions
- Excellent interpersonal skills
- Ability to maintain sanitary and safe work environment
- Patient, tactful, and enthusiastic demeanor
- Ability to adapt new dietary practices
- Must maintain Food Handlers Certification
Job Duties
- Review menus prior to preparation of food
- Assist in developing, implementing, and coordinating department policies and procedures
- Interpret department policies and procedures to personnel, residents, visitors, family members
- Assist in planning regular and special diet menus
- Assure that food is available for preparation by cooks
- Perform administrative requirements such as completing necessary forms and reports
- Coordinate dietary service with other departments
- Work with the facility's dietitian and implement recommended changes
- Ensure that all dietary procedures are followed
- Assist in developing methods for determining quality and quantity of food served
- Assist in standardizing work methods
- Assume authority, responsibility and accountability of Head Cook
- Ensure menus are maintained and filed properly
- Process diet changes and new diets
- Implement recommendations from Infection Control and Safety Committees
- Attend department and staff meetings
- Meet with dietary personnel to address issues
- Maintain good rapport with other departments
- Ensure compliance with dietary policies
- Create a warm and positive departmental atmosphere
- Delegate authority and responsibilities
- Assist in staff scheduling and work assignments
- Report absenteeism, complaints and grievances
- Conduct performance evaluations
- Report occupational exposures
- Participate in in-service training and orientation
- Assist in departmental projects
- Attend workshops and seminars
- Prepare meals according to planned menus
- Prepare and serve palatable meals
- Assist in meal service
- Serve food following portion control procedures
- Prepare food for therapeutic diets
- Inspect special diet trays
- Serve nutritional bedtime snacks
- Provide appropriate equipment and utensils with meals
- Review care plans
- Prepare substitute foods when required
- Maintain sanitary food preparation
- Assist in maintaining dietary department cleanliness and safety
- Ensure safety regulations are followed
- Follow Infection Control and Universal Precautions
- Coordinate cleaning duties
- Maintain equipment and supply inventory
- Report accidents and hazardous conditions
- Ensure proper food storage
- Coordinate with Nursing Services for isolation procedures
- Maintain fire safety programs
- Conduct cleanliness inspections
- Dispose refuse properly
- Ensure dietary personnel wear protective clothing
- Assist in purchasing food and supplies
- Maintain stock levels
- Inventory incoming goods
- Recommend equipment and supply needs
- Ensure chemical safety
- Verify invoices
- Maintain resident confidentiality
- Knock before entering rooms
- Follow authorized food substitution policies
- Work in well-lighted, ventilated areas
- Communicate with medical and nursing staff
- Work beyond normal hours and be available for emergency call-backs
- Attend continuing education
- Handle physical demands and hazards
- Plan dietary services with other supervisors
- Assist with resident evacuation during emergencies
- Maintain Food Handlers Certification
