The role of Cook at California Fish Grill is an hourly, non-exempt position that is integral to the daily operations of the restaurant. Reporting directly to the Restaurant General Manager or Training General Manager, this position is responsible for preparing and directing the preparation of food in compliance with all sanitation, health, and personal hygiene standards. The Cook must follow established food production procedures that promote quality and consistency. This includes managing food supplies diligently to minimize waste, loss, and fraud while maintaining efficiency in the kitchen.

In this role, the Cook will utilize production systems to determine food type and quantities needed, ensuring all necessary supplies are available in a timely manner. The Cook sets up steam tables and performs food temperature checks prior to service to maintain food safety and quality. Maintaining daily production records and coordinating food production timing are also key responsibilities, ensuring meals are served at the optimum temperature and appearance. The Cook routinely cleans and maintains all kitchen equipment and work areas, including dishwashing duties, to uphold strict cleanliness and safety standards.

To succeed in this fast-paced environment, a Cook must possess strong knowledge of restaurant operations, food safety, sanitation, and quality guest service. Essential skills include moderate reading and writing abilities, effective interpersonal communication, manual dexterity, and the physical capacity to perform tasks requiring standing, lifting, bending, and reaching. Job Duties

  • Prepares or directs preparation of food served using established production procedures and systems
  • Determines amount and type of food and supplies required using production systems
  • Ensures availability of supplies and food or approved substitutions in adequate time for preparation
  • Sets steam table
  • Complies with established sanitation standards, personal hygiene, and health standards
  • Observes proper food preparation and handling techniques
  • Stores food properly and safely, marking date and item
  • Reports necessary equipment repair and maintenance to supervisor
  • Plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food is preserved
  • Apportions food for serving
  • Maintains daily production records
  • Keeps work area neat and clean at all times including dishwashing
  • Cleans and maintains equipment used in food preparation
  • Completes food temperature checks before service
  • Completes requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned
