Job Requirements

  • Graduation from high school or GED equivalent
  • At least 3 years of related experience
  • Completion of a 3-hour sanitation class as required by the San Diego Health Department
  • Completion of the University's Hazmat Communication Program
  • Completion of an 8-hour ServSafe certification as required by the San Diego Health Department
  • Ability to work a varied hourly work schedule including evenings, weekends, and holidays
  • Ability to work a flexible schedule during intersession and summer conference periods
  • Excellent personal hygiene due to contact with food and food products
  • Successful completion of a pre-employment background check
  • Ability to use POS system and handle cash in retail areas as needed
  • Must provide official education transcripts for degree verification

Job Qualifications

  • Graduation from high school or GED equivalent
  • At least 3 years of related experience
  • Supervisory experience preferred
  • Experience as a sushi chef in a high-volume restaurant or sushi bar preferred
  • Certification from a culinary school or sushi training program preferred
  • Ability to work with minimal supervision
  • In-depth knowledge of Japanese cuisine, sushi preparation techniques, and sushi knife skills
  • Creative flair and attention to detail in sushi presentation
  • Strong understanding of food safety and sanitation practices
  • Ability to work efficiently and calmly under pressure in a fast-paced environment
  • Excellent communication and teamwork skills
  • Knowledge of proper cooking times, temperatures, and food preparation procedures
  • Strong communication and problem-solving abilities
  • Ability to organize personnel, work, and materials for maximum productivity
  • Proven ability to supervise and motivate staff
  • Excellent skills in use and maintenance of kitchen equipment and tools

Job Duties

  • Prepare sushi rice and ingredients such as fish, vegetables, and seaweed according to traditional and creative recipes
  • Ensure all sushi items are fresh, properly portioned, and aesthetically pleasing
  • Create visually appealing sushi presentations including nigiri, sashimi, maki rolls, and specialty rolls
  • Supervise and participate in the quality and quantity preparation of all sushi menu items
  • Review menu with supervisor and coordinate daily production
  • Organize work areas for ease of operation
  • Check production sheet against inventory to assure necessary items are on hand
  • Inspect work area for problems or discrepancies and report findings to supervisor
  • Assist in forecasting proper quantity preparation
  • Follow correct methods of preparation
  • Make products to specification and review recipes with supervisor for variances
  • Ensure proper product portioning
  • Responsible for timely delivery, setup, and dispensing of menued items
  • Assist in completion of production and event records
  • Verify quantity and quality of all incoming products
  • Ensure proper rotation and storage of products
  • Operate all kitchen equipment properly
  • May assist in ordering products and supplies
  • Assist in research, development, and testing of new recipes and menus
  • Attend weekly production meetings
  • Maintain good customer relations through attitude, appearance, and attention to detail
  • Maintain consistent high-quality standards and quality-test every finished product
  • Assure attractive garnishing and appropriate display of foods
  • Ensure products are not held longer than holding time frames
  • Service customer needs with business urgency to provide quality service
  • Report customer feedback to supervisor or area manager
  • Provide input on menu and special meals in weekly meetings
  • Set leadership example by willingness to work on all job tasks
  • Provide consistent feedback to employees regarding performance
  • Ensure smooth workflow, communication, and supportive attitude
  • Ensure employees adhere to all Dining Services policies
  • Delegate assignments appropriately and follow up
  • Orient new part-time employees on equipment and products
  • Train part-time employees in proper cooking procedures, times, temperatures, and equipment use
  • Implement and maintain proper safety and sanitation standards
  • Utilize proper food handling techniques
  • Assist in scheduled cleanup operations
  • Operate equipment in an energy-efficient manner
  • Maintain excellent personal hygiene
  • Responsible for security of unit in supervisor's absence
  • Maintain kitchen cleanliness and sanitation
  • Report accidents or injuries to supervisor immediately
  • Report equipment maintenance issues to supervisor
  • Know location and use of fire extinguishers and safety systems
  • Follow all University and Dining Services policies
  • Operate POS system and handle cash as needed
  • Assist in monthly inventory
  • Perform other duties as assigned
