The role of Cook at California Fish Grill is an hourly, non-exempt position responsible for preparing and/or directing the preparation of food that meets the company’s quality and safety standards. The Cook ensures compliance with all sanitation, health, and personal hygiene requirements while effectively following established food production procedures. This position requires careful use of facility resources, supplies, and equipment to maximize efficiency and minimize waste, loss, or fraud. Reporting directly to the Restaurant General Manager or Training General Manager, the Cook plays a critical part in sustaining the high level of service that guests expect.

The Cook’s duties include determining food and supply requirements, ensuring timely availability of necessary items, setting up steam tables, and maintaining proper food storage with accurate labeling according to safety standards. Additionally, the Cook performs regular equipment maintenance checks and reports any repair needs to supervisors. Food production must be carefully planned to align with meal serving schedules, preserving food quality, temperature, and overall presentation. This role also encompasses maintaining daily production records and keeping the work area clean and organized, including dishwashing duties.

Beyond food preparation, the Cook at California Fish Grill supports the company’s rigorous safety protocols, participates in in-service training, and adheres to dress code, uniform, and hygiene standards. The Cook works collaboratively with other team members, promoting positive public relations and employing tactful communication, especially in sensitive or urgent situations. The role demands physical stamina and manual dexterity, with frequent standing, reaching, lifting, bending, kneeling, and the ability to handle equipment safely.

Candidates for this role should have a high school diploma or GED, 2-3 years of relevant food service experience, and valid ServSafe or other approved Food Handler Certification. Job Requirements

  • High school diploma or GED
  • 2-3 years related work experience
  • Valid ServSafe or other approved Food Handler Certification
  • Prior experience in related food service positions
  • High level of integrity and honesty
  • Ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 lbs or less
  • Ability to follow safe work practices and company policies
  • Able to maintain composure under pressure
  • Good communication and interpersonal skills
  • Able to complete assigned duties with minimal supervision

Job Duties

  • Prepares or directs preparation of food served using established production procedures and systems
  • Determines amount and type of food and supplies required using production systems
  • Ensures availability of supplies and food or approved substitutions in adequate time for preparation
  • Sets steam table
  • Complies with established sanitation standards, personal hygiene, and health standards
  • Stores food properly and safely, marking date and item
  • Reports necessary equipment repair and maintenance to supervisor
  • Plans food production to coordinate with meal serving hours
  • Apportions food for serving
  • Maintains daily production records
  • Keeps work area neat and clean at all times including dishwashing
  • Cleans and maintains equipment used in food preparation
  • Completes food temperature checks before service
  • Completes requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned
